I usually roast veggies at 425, but the recipe I made last night called for one cubed butternut squash and one chopped onion to cook at 350 for 40 minutes (in single layer on foiled sheet pan). They roasted perfectly!
They few times I have roasted veggies I have done so at 425 degrees for about 20-25 minutes. I am making something tonight that requires the temp to be at 350. How long do I roast the veggies for? Is that temp. high enough?? Thanks!

I'd throw the veggies in alone with whatever you're making about 30 minutes before kickoff, then crank it up to broil (and move everything upward) when you pull the entree out. Keep a close eye once you're broiling. It will only be a few minutes for them to caramelize up.
Oh gosh I NEVER cook according to time. I go by sight and my common sense.
I toss veggies in a ziplock with extra virgin olive oil. Sprinkle with salt. Put on a foil lined pan. Stick it in oven at 400-450 degrees. I watch it and take it out when singed. I like it singed. And then it is caramelized that way.
Take it out. Eat it at room temp. or cold.
You can roast any veggie. Well except lettuce.
I roast: broccoli, squash, onions, eggplant, cauliflower, carrots, potatoes. Typically.
The other night I did roasted pork chops w/ veggies at 375 for about 50 minutes. They turned out fabulous.
I usually roast my veggies at 400 degrees for 45 to 60 minutes, otherwise they are still hard.
350 doesn't seem hot enough to "roast" them. I do mine on 400 for 20/25 minutes. If you stay with 350, it'll probably take at least 45 min.
Last night I did carrots, potatoes and onions at 350 degrees for over an hour. I think they were in there for about an hour and 15 minutes.
