string beans and roasted potatoes... two seperate dishes...not together.......i am a big big DOPE in the kitchen....any simple recipes that you would be wiling to share with me please? Thank you very much in advance.!

Do you mean a combined dish with string beans AND potatoes? This one also has asparagus in it, but you could leave that out. You can use any kind of potatoes. Have been making it for years - really yummy!

Taco cupcakes: ingredients are ground beef, taco seasoning, won ton wrappers, received beans or drained black or pinto, shred cheese, salsa and sour cream. Brown ground beef and make ya o meat. Spray or lightly grease a muffin tin (not mini), push 1 wonton wrapper into each "greased" muffin cup, spoon in 1 table spoon of taco meat into each wrapper, 1 tablespoon beans, top of with shred cheese. Bake in oven on 350 for 18 mins. Top with sour cream and salsa. This is a great apitizer, but I make it as dinner and my kids LOVE them.

Two easy ones I make that my family enjoys are:
Green beans (undrained), chopped fresh portobello mushrooms, 2T minced garlic. Throw them in the sauce pan and simmer on the back of the stove until the mushrooms are cooked through.
Lyonnaise Potatoes:
Spray a casserole dish with pam, Preheat your oven to 350. Put 1/4 c butter in pan and melt in oven Scrub small redskin potatoes cut any larger ones so they are all of a uniform size and peel a strip out of the middle. Peel and slice a large onion, cut slices in half. Put potatoes and separated onion slices in casserole dish, sprinkle 1T dried parsley and stir well. Bake uncovered for 45 mins to 1 hour stirring about every 15 minutes.

Cut your potatoes in about 2 inch chunks. Drizzle in lots of olive oil, season with salt, pepper, garlic and rosemary, sometimes I add basil. I love to really pile the seasonings on. Bake at 375 until potatoes are tender, approx 25 minutes for my oven, but it's gas so it cooks fast. I blogged this recipe here (scroll down till you see the picture):

Beans... First, I saute onions in olive oil in a skillet. Then I add in my beans, and season with salt, pepper, and garlic and a little bit of Smart Balance butter. (I cook asparagus, squash and zucchini all the same way. Always turns out good!!)

Garlic can either be garlic powder, or fresh garlic chopped up or pressed in a garlic press.

I make garlic roasted potatoes.

I use red potatoes, wash well, do not peel, slice in good sized chunks.

Spray a cookie sheet or 9x11 glass baking dish with Pam. Put potatoes in the dish

I use fresh garlic, at least 1 entire bulb, peeled and each clove cut in 1/2. Spread over potatoes.

Dot butter over potatoes and garlic, sprinkle with pepper to taste and bake.

Open the oven and stir occasionally. Roast until the potatoes and garlic is crispy. The garlic tastes like nuts when it is roasted like this. Very tasty!

I do a very simple string bean (green bean) dish which seems to be very popular. Fresh string beans, snap off the ends, snap in half, rinse off. Thinly slice bacon into strips and fry. (not a huge amount, just enough to mix well). Just when it's about 1/2 way done, add some diced onion and a little fresh garlic. Cook all together. Meanwhile, steam the beans; when they are steamed and not mushy, add to the bacon mixture (strain the fat away) :) Near the end, add sliced almonds.... Serve nice and warm! Yummmy! Also, you can do diced ham instead, but you won't have much of the smoky flavor that the bacon adds.
My roasted potatoes: Small red potatoes, cut into cubes. Onion, sliced, fresh garlic, bell pepper, diced, fresh herbs like oregano, parsley, salt & pepper, basil, etc... (basically what you have and what sounds good). Toss all together with a little Extra Virgin Olive Oil. Roast in the oven at about 350 degrees, turn half way through, cook til tender. I especially love to brown/crisp them just a bit.

The best recipe for string beans, take two or 3 slices of bacon, cut them into small pieces, then cook in a heavy saucepan until they are starting to brown up. Then add some chopped up onion and sautee until the onion is soft. Then add your green beans and heat through. If your green beans are fresh, add just enough water to make it steam and cook until they are soft. You can also add fresh mushrooms to this. Another good addition is toasted almonds sprinkled on top.

I like to use Red Potatoes for my roasted potato recipes.

I heat the oven to 375, and then *I* use a 9x13 glass dish, and put in a spoonful of butter in the pan and into the oven to melt.

Then I wash the red potatoes and cut them up into medium sized chunks (with the skins on) drizzle olive oil on them, and throw them into the already melted butter dish. I add, Garlic Powder, Parsley Flakes, Onion, Salt, Pepper, and stir up until all potatoes are coated.

Put in the oven and cook until potatoes are tender, (usually 30 minutes)

Then done! Always turns out delicious and goes great with baked chicken, and steamed veggies.

Find a good general information cookbook, such as 'The Betty Crocker Cookbook'. Cooking is not difficult but you need basic information. A good general information will have great recipes and cooking charts. For instance under meats it will say chicken and offer baking, broiling and frying information how many minutes per pound. How long to cook each veggie. you then learn how to time each item. You put on the food item that takes the longest to cook and work from there and all of the food is done at the same time.
