You can rehydrate them to make things like apple pies of apple cakes. You soak one cup of apples in 1.5 cups of water for an hour and half.
I have used dried apples to stuff pork chops too. I cut the apple rings into smaller bits. Cooked it in a bit of apple juice to rehydrate it. I cooked up come bacon and chopped it up. Added the bacon some sage, garlic and a bit of lemon juice. I cut a pocket into some thick sliced pork chops and filled them with the stuffing. Used a toothpick to hold it closed. Seared the meat in a skillet and then baked in the oven until it was cooked. I don't have exact measurements or cooking time, it was something I kind of through together. I am sure I based it on another stuffed pork chop recipe I had on hand. My mother in law thought it would have been great if I added some dried cherries to the apples as well.
