HI all,
Any ideas for Leftover Beef Roast that I've already sliced pretty thin and also have a little bit of roast potatoes and carrots? My kids aren't big on casserolles though I love them.

TAQUITOS OR FLAUTAS,
You combine the shredded beef, mash the potatoes and carrots, saute with some minced onions in olive oil. (set aside and cool) Put a little more olive oil in the pan, slightly warm a corn tortilla (one at a time...each side...less the 30 seconds). Put a little beef filling in the tortilla, rolled up and secure with a tooth pick. Fry in olive oil until crisp (keep warm in low oven). Serve with guacamole and your favorite salsa (I like Herdez...it comes in mild,med and spicy). I usually make some refried beans and/or rice. (If I don't have fresh beans, I like Rosarita original along with onions and I use Rice A Roni Spanish rice mix). Your family will LOVE this dinner!
I have to either go with sauté the beef with onions and melt some cheese with it for a sandwich or cut up the meat and sauté with jalapeños and red pepper, onions and fajita spices and serve on a tortilla.
You can shred the beef and mix in gravy and use for hot beef sandwiches or over mashed/whipped potatoes.
Or make cold roast beef sandwiches and slice potatoes and carrots for fried potatoes and carrots.
Then make another veggie or salad.
My husband's favorite meal of all time is Pot Roast...and we have extra, the next day I make extra gravy and he has open faced sandwiches w/the meat & gravy!
My favorite thing to do with leftover pot roast is turn it into barbeque. Just put the potatoes and carrots you have left on the side. use the meat in sandwiches.
I chop it up, make or buy a gravy. Boil some egg noodles. Mix together all ingredients, add carrots, peas...cubed potatoes optional......YUUUUM!!!!
Make a sauce or a good gravy.
And eat it with that.
Or melt cheese over it and make sandwiches with it. With the meat I mean.
I have nothing helpful to offer. It just must be friday - the phrase "beef bottom" made me chuckle ;)
