I need a homemade mac 'n' cheese recipe! Really cheesy, yummy! Big enough for a casserole size dish. I know you moms out there have some great family recipes. thanks!!!

The trick is to start stirring it every 20 minutes after an hour or so of cooking to keep the cheese from curdling.

I make it the way my mom did, and my kids love it. We simply use elbow noodles, velvetta, milk and butter. I usually use about half a bag of noodles, a TBSP of butter, 1/3 of a log of velvetta with a splash of milk as needed to thin out the cheese. I add salt and pepper to taste too.

i use a whole bag of mac noodles (one that serves 8) you can use either the big or small noodles

i cook them until al dente
while they are cooking shred your cheese (i use about 1/3 of a 1lb block) (you can also use cream cheese if you want it really creamy, if you do then i use only 1/4 of a block of cheddar & then about a 1/4 of a block of cream cheese)

drain noodles, put about 1/2 cup of milk into pot with a couple of tbs of butter, then add cheese & stir while melting. when melted you can either add more milk if it's too thick or add some cornstarch if it's too thin (it will be thinner if you dont use cream cheese)

then add back in noodles & stir until combined

if you want to put into a cass. then pour into cass. dish & top with bread crumbs & some more cheese & bake until melty & crispy on top. (for added flavor i add bacon bits: fresh made)

to make into a meal i add cut up cooked chicken & broccoli

Also my own I just make it until it looks right (drives my dad crazy because I can't tell him exact measurements!)

1-2 pounds of elbow mac cooked al dente
butter
2 cans cream of mushroom
2 eggs beaten
milk
4 pounds of cheese of your choice (sharp cheddar, monteray jack, fontina are my favorites!)

make sure to have enough cheese to sprinkle on top if you like

I usually mix the soup and milk together and put in the microwave. then I add some cheese to my "hot" soup and milk. Mix the mac and hot mixture together and add some more cheese to it while mixing. Pout into a large casserole dish that's been greased with butter and bake covered at around 325 until bubbly (20-30 minutes). You can add cheese to the top and melt in oven if you like.
