LOVE, LOVE ribs in the crock pot! They are the best I've ever had, and very simple! I use baby back pork ribs. Cut the ribs in sections of 3 or 4. Slice one large onion up and put onion & ribs in the crock pot. Use about 2 or 3 cups of your favorite bbq sauce (enough to cover ribs). Cook on LOW for 7 hours. OMG... they are falling off the bone tender & FABULOUS! Enjoy!!
I use my crock pot cookbooks for various recipes, but one of the easiest I do, especially if I'm short on time or money, is a whole chicken. You can do it just like beef. Get the chicken (make sure there are not gizzards, etc.) and put it in there with some veggies, maybe some white wine, a few spices and voila!
My other favorite easy recipe is to get a pork butt, put it in, pour in one bottle of root beer and cook for 8 hours. Then take it out, shred it with two forks (it will be very easy to do), mix in one bottle of BBQ sauce and keep another bottle on the side to top it off. Slap it on some buns and you have delicious pulled pork sandwiches!

Spaghetti sauce, chili, pulled pork or chicken > cook all day chicken in broth until it's done and tender enough to pull apart ("shred") with a fork. Add bbq sauce and let simmer for a bit. Serve on a bun - yum!!! So easy and feeds lots of people! :-)
I love my crockpot. In fact, we used it tonight and I'm waiting for it to cool down enough to wash it!

Tonight we tried "Brown Sugar Chicken" and it's fantastic. Another favorite is "Salsa Chicken and Black Bean Soup" (we add an extra can of beans to that recipe). Actually, both of those recipes are on her Reader's Favorites link!
