Hi all!
I just received a panini maker over Christmas and have made some basic paninis in it so far.
Was wondering, for any of you that have one at home, what's your favorite panini that you make at home for yourself and your family?

I got a panini maker LAST christmas (2010).

I LOVE doing scrambled egg b'fast panini's - but they are a TON of work, because I scramble the eggs first. But scrambled eggs with bacon/sausage/chicken/whatever and cheese.

I also like brie and apple panini

You can't go wrong with the ham/turkey and cheese panini

my daughter did "pizza" paninis - with pepperoni, mushrooms, slices of provalone and pizza sauce. They were tasty.

I also did a cesear salad panini. It was kind of messy and there might be a better way...... lettuce, mixed up cesear dressing, parm cheese and sliced rotisserie chicken. It was soooooo good, but the smaller pieces of lettuce kept falling out. Maybe if you just used bigger pieces?

my favorite panini is turkey and havarti cheese, although when i worked at a deli they had a reuben panini that was to die for. mmmmm now i want a panini

MMM I just made bacon apple paninnis for dinner last week.
Cook up some bacon. Slice up an apple and put it in a bowl with a little lemon juice and ginger ale (I don't know why but it really enhances the taste and crispiness of the apples). Chop up tarragon and mix it with apple jelly, spread on piece of bread. Spread other piece of bread with dijon mustard. Layer bacon, apples, and havarti cheese. Butter the outside of the breads and grill.

It suonds kind of weird I know but it was good.

so glad you asked this! I don't cook at all in summer, too hot, and I bought a panini maker a few months ago but haven't used it yet since I'm waiting for the hot months to get here. So I hope you get a lot of responses because I need them too! Good luck!

First of all, good job Theresa N. for getting the word "panino" right - yes, panini is plural!
Now, this is my fave:grill slightly two slices of fresh, good bread to make them warm and crunchy. Chop cherry tomatoes in a bowl and season with salt, pepper, dried oregano and extra v. olive oil. Mix and spread over the bottom slice. Then get a fresh mozzarella (if you have an Italian store, get it there - grocery store don't carry usually the real one), cut it in slices and put over the tomatoes. Cover with the other half of bread and, voilà, that's a fresh, savory Italian panino...buon appetito!

Chicken breast with fresh basil and pesto instead of mayo--or even pesto-mayo, fresh tomatoes, and provolone cheese. Man, I miss that. The place near work has it but the calories are outrageous. Gotta get me a grill for home.

Sorry to be annoying but one sandwich is a panino, two or more sandwiches are panini.

Anyway.....I use a cast iron pan to make panini, just press it down with a pot lid that's smaller. Any leftover meat with cheese, some greens, sliced apple or pear. Sometimes mayo, or mustard, or someother condiment, hot sauce or salad dressing.
