Try goat's or sheep's milk cheeses. Then you can adjust the recipes for what you have. Try a little of each and see if it hurts her, if not, then try those options.
I am dying for a good pizza alt, I nurse my daughter and I can not drink milk, eat more than a slice of cheese on a sandwhich.
I need ideas. I have to watch spices as well. so two family favorites are off the menu right now.. spaghetti and pizza. I can do Alfredo sauce ( i have not noticed much of an issue with her), so I tried chicken alfredo pizza.. she had a reaction.. it was the cheese ( this was before I knew cheese was affecting her). It makes her tummy hurt and she grunts a lot..

Try Daiya cheese - it is supposed to be the BEST tasting out there. I tried various goat, soy, etc cheeses when my daughter was a baby, and nothing tasted good to me, so I gave up. Daiya is pretty new.
If you're looking for a great alternative to queso or a sauce for mac n' cheese, try this:

I have quite a few recipes with dairy alternatives for other things on my blog as well.
My son had similar symptoms, and I had a very restricted diet while breastfeeding him. He is now 4, and we have found that while he can't have most cheeses he can have parmesean cheese. There are a few pizza places we have found that if we explain his situation that they will make him an individual pizza with just parmesean cheese.
Sorry just getting to answer this now, but Daiya cheese is awesome! Best dairy free, soy free cheese I have found. You can use it on pizza or baked pasta, quesadillas, etc. It comes in shreds.
You could try something like a soy-based cheese, or some other vegan alternative - see what you can find at a store that carries vegan and other specialty products.
Or can you pump, bottle-feed that, and then try to have some cheese pizza and not let her have that milk? But I don't know how long it would in your system for or it it's worth taking the chance.
I am lactose intolerant and find that goats cheese works for me :-)
