Anyone Have Some Good Pot Luck Recipes That Travel Well?

Looking for some easy ideas for something to bring to a Pot Luck Reunion. Each family is asked to bring enough food to feed their own families, then everything is put on the table for everyone. The biggest problem is that it's 4 hours from home and everyone is trying to heat their stuff up in one oven! I've done briskets the last few years and had thought about ham this year, what are some of your well traveling ideas??

So What Happened?

Thanks for the help. I ended up with the ham, it can be eaten cold. Then made a couple of pasta salads, a fruit salad and 2 types of cookies. My chocolate oatmeal no-bake where the biggest hit! Also no ham made it home. Thanks for the suggestions, I'll be trying some of them when I have more time to make them and less distance to travel.

I agree with the crockpot ideas, and if you can cook it in an oven, most dishes can be converted to being cooked in the crockpot. What's more, pick up a converter for your "cig lighter" in your vehicle and then you can plug the crockpot in while you are driving and have your item cooking while you drive and have a nice dish when you arrive.

Ideas for crockpot: Meatballs, little smokies, chicken, ribs, pasta dishes (precook the pasta to al dente) then put all in crockpot....

When we do this (5 hours away) we just wait until we get to our destination and pick up something at the store. Sometimes we get deli items and loaves of bread/condiments and other times we have purchased buckets of chicken from KFC with side dishes. Sorry if that's not what you were looking for. : )

We usually take crock pot pizza. it is a family favorite & travels well.
1 pkg Kluski noodles
1 jar spaghetti sauce
1 lb. of ground beef
4 cups of shredded cheese
topped with pepperoni

Cook the noodles, drain & pour in the bottom of the crock pot. Cook the beef & mix with spaghetti sauce, pour over noodles. Layer remaining ingredients. Cook 4 hours on low.

We like more pizza toppings so I often add mushrooms, black olives, onions & peppers before the cheese & pepperoni. I cook it at home & then take the crock pot with & replug in when we arrive at our destination to re-heat. Good luck & Enjoy!

I have two recipes that are very easy and taste good hot or room temperture.
cheeseburger pie
1lb ground beef
1 onion chopped
1/2 tsp salt
1cup shredded cheese
1/2 cup pancake mix
1 cup milk
2 eggs
heat oven to 400 degrees
cook hamburger and onion then drain and stir in the salt
spread in the dish and sprinkle with cheese (note: I like to buy a cheap disposable aluminum pan makes clean up easy)
in bowl mix pancake mix eggs and milk until well blended
then spread over top of of the hamburger mix bake for 25 minutes or until knife comes out clean.

Personally I like to add other veggies to this recipe such as corn and bell pepper

the next recipe can be put into a crockpot either to cook or after cooking to reheat.
sausage cheese balls
3 cups pancake mix
1 lb ground sausage (someone suggested using hamburger with the sausage)
4 cups shredded cheese
1/2 cup grated parmesan
1/2 cup milk
1/2 teaspoon rosemary crushed
1/2 teaspoon parsley flakes or 1 1/2 fresh parsley
heat oven to 350 and lightly grease the pan
stir all ingredients together and make balls
put balls into the pan and bake for 20-25 minutes or until golden brown

I added a few extra spices to mine but I seen a suggestion on this recipe for putting them into a crockpot after baking them and adding BBQ sauce to them.

chicken tator tot casserole
get one of those pyrex insulator pack things and this dish will stay warm for hours

tator tots
2 cans cream of chicken
2-3 pieces boneless chicken
broccoli or other veggies you prefer (fresh or frozen veggies) canned veggies will be too mushy.
shredded cheese sprinkled on the top

preheat oven to 450
use 9X11 glass pan that your pyrex pack comes with

layer the tator tots in pan in rows
bake for 20 minutes
while tator tots are baking, boil or pan fry the chicken, steam broccoli or other veggies in microwave

I usually use the frozen boneless thighs and just pull out 2-3 and boil them for 20 minutes or until they are done then cut the chicken up in small pieces.
I have a microsteamer and steam veggies for 3-4 minutes--don't want them crunchy but don't overcook to be mushy either.

after tator tots are done, pour the 2 cans of cream of chicken soup over them and spread it over the tator tots, then layer the chicken, veggies, and sprinkle the top with shredded cheese probably a cup or so. Just enough to sprinkle the top as it will spread out when melted.
Put back in oven about 5 minutes or until cheese is melted.

Since the dish is hot and you are putting it in the insulator pack you won't have to fully heat the pack that you heat up in the microwave as the hot dish will heat it up. Put the lid on the dish and put in the pack and you are on your way. It will stay warm for hours and I have even left the dish in the pack and unzipped the top and folded it underneath the dish so it keeps the food a little warmer while sitting out waiting to be served especially if the dinner isn't starting right away. This dish is a favorite and a lot of people ask me how to make it. I take it to just about every church dinner and it is gone within a few minutes.
I have also made this dish for families with new babies or have family members in the hospital. I cook it in a foil pan, and add the shredded cheese on top but don't cook it that extra 5 minutes and cover the top with foil, write cooking directions on the foil with a marker, and put in fridge. Bake at 450 for about 10 minutes or until cheese is melted. Because the dish has been in the fridge and is cold it will take a little longer to heat up. This is a quick easy dish to serve and they can keep it in the fridge or even freeze it and heat up like a frozen dinner.

You can also make this with tatortots, 1 can chili, and cheese. It isn't as good for a potluck but a good dish for home.
Have also made it with polish sausage slices with cream of mushroom soup.

those insulator packs are great for hot or cold foods so whatever you cook and want to keep warm, they are great and you probably won't need to heat anything up when you get there.

I don't see why you couldn't do your brisket, put it in a crockpot and then warm it up in that instead of the oven. I have a recipe I would like to share. I like this one because it isn't mayonaise based can be served room temperature and it's unique.

Ravioli Salad:
1 pkg frozen cheese ravioli (cooked according to directions)
1 sm red onion, chopped
1 large green pepper, chopped
1 large tonato, chopped
1/3 c basil oil
1/4 c seasoned rice wine vinegar
1/2 c FRESH grated parmesan cheese (not from a shaker)
2 tsp. basil leaves or 1 Tbsp. fresh
2 tsp. oregano leaves
2 tsp . thyme
salt and pepper

When ravioli is done chill in refridgerator for at least 1 hour. In a smal bowl, whishk 1/4 cup oil, vinegar, and spices. Place in refrigerator. In a large bowl combine ravioli,onion,peppers, and tomatoes. Whisk oil mixtrue again and then drizzle over ravioli mixture;tossing gently. Chill. For best result, prepare a day in advance.
