chicken tator tot casserole
get one of those pyrex insulator pack things and this dish will stay warm for hours
tator tots
2 cans cream of chicken
2-3 pieces boneless chicken
broccoli or other veggies you prefer (fresh or frozen veggies) canned veggies will be too mushy.
shredded cheese sprinkled on the top
preheat oven to 450
use 9X11 glass pan that your pyrex pack comes with
layer the tator tots in pan in rows
bake for 20 minutes
while tator tots are baking, boil or pan fry the chicken, steam broccoli or other veggies in microwave
I usually use the frozen boneless thighs and just pull out 2-3 and boil them for 20 minutes or until they are done then cut the chicken up in small pieces.
I have a microsteamer and steam veggies for 3-4 minutes--don't want them crunchy but don't overcook to be mushy either.
after tator tots are done, pour the 2 cans of cream of chicken soup over them and spread it over the tator tots, then layer the chicken, veggies, and sprinkle the top with shredded cheese probably a cup or so. Just enough to sprinkle the top as it will spread out when melted.
Put back in oven about 5 minutes or until cheese is melted.
Since the dish is hot and you are putting it in the insulator pack you won't have to fully heat the pack that you heat up in the microwave as the hot dish will heat it up. Put the lid on the dish and put in the pack and you are on your way. It will stay warm for hours and I have even left the dish in the pack and unzipped the top and folded it underneath the dish so it keeps the food a little warmer while sitting out waiting to be served especially if the dinner isn't starting right away. This dish is a favorite and a lot of people ask me how to make it. I take it to just about every church dinner and it is gone within a few minutes.
I have also made this dish for families with new babies or have family members in the hospital. I cook it in a foil pan, and add the shredded cheese on top but don't cook it that extra 5 minutes and cover the top with foil, write cooking directions on the foil with a marker, and put in fridge. Bake at 450 for about 10 minutes or until cheese is melted. Because the dish has been in the fridge and is cold it will take a little longer to heat up. This is a quick easy dish to serve and they can keep it in the fridge or even freeze it and heat up like a frozen dinner.
You can also make this with tatortots, 1 can chili, and cheese. It isn't as good for a potluck but a good dish for home.
Have also made it with polish sausage slices with cream of mushroom soup.
those insulator packs are great for hot or cold foods so whatever you cook and want to keep warm, they are great and you probably won't need to heat anything up when you get there.
