What to Do with Cooked Egg Yolks?

I just hard boiled three dozen eggs and only need the whites. I hate to throw out 36 lovely cooked egg yolks... but what to do with them? I know I can eat a few, but I'm the only one in the house who will. Should I sneak them in smoothies for my kids? Give them to the bunnies and birds outside? Other ideas? Are there any recipes that call for lots of cooked egg yolks?

You can mash them up and mix with avocado and a little salt for a sandwich spread. My kids love it.

It might work to mash them and make them into egg salad. I don't have a recipe, I am sure you could search it. My family loves egg salad sandwiches and 3 dozen yolks won't make a lot.

You could also slice or dice them and add them to a salad. They will keep for several days in the fridge.

I would mix them up like making deviled eggs and maybe make a sandwich out of it or a dip. That sounds really good!!!!

Mash them up with mayo and mustard and a little dill relish in some tuna or chicken salad.

I would "devil" them and eat them on crackers or with veggies. And although they have cholesterol, they're pretty nutritious otherwise. They have choline, right?

You also can freeze them, and thaw a couple at a time to blend into sauces and gravies. Adds a lot of richness. Would not use frozen egg yolks for an egg salad etc., though - the texture will be wrong. Maybe make egg salad with some and freeze the rest.

I do like the smoothie idea for kids -- tons of protein in the yolks. If the smoothie has other strong flavors it won't taste "eggy" either.

Because of the cholesterol, I usually either throw them outside for the birds (borderline cannibalism I guess! lol!) or give them to my doggy. He loves them mixed in with his food.

Otherwise, I've been known to just throw them in the trash.
