LOL! I made enchiladas last week and the rest of the chicken has been sitting in the fridge so I need to do something with it. Just nothing really sounds good. Thanks for the ideas!!!

BBQ chicken pizza, I've said it before and I'd say it again. Put BBQ sauce on the crust, add chicken, cheese and bake.
Yummy! The kids love it!!

Mix it with BBQ sauce for some sandwiches.

in my hometown we used to make shredded chicken sandwiches. You take the shredded chicken, throw it in a pot add cream of chicken soup with chicken broth (some use one can of cream of chicken one can of cream of celery, but I like just the cream of chicken). Most folx from my hometown add either ritz/townhouse crackers or Jones potato chips (these are only available in Ohio but can be ordered and shipped, think wavy lays type chips) to the mix also. Some also put the chips directly on the sandwich. You can also use bread crumbs if you prefer. Put the whole shebang on the roll of your choice (hamburger buns, hot dog buns, kaiser roll, ect. I personally prefer the kaiser roll) and chow down.
Easy peasy lemon squeezy and soooooooooooo delish.
Gumbo.. get some sausage, shrimp, okra and a gumbo season package with some chicken stock, and your good to go...
Add some teryaki to it then serve it over rice and vegetables?
tacos, throw it over salad and add cheese, soup, enchiladas, throw it in beans and cook slowly, great with alfredo sauce over pasta, stir fry with veggies and toss over rice, etc.
Long story short use your imagination, the sky is the limit.

Tacos, enchiladas, sandwiches, put it in pasta. That's all I can think of at the moment. :-)
Indonesian fried rice!
Smashed garlic and onion and chilly if you like hot, sautee this paste till it smells nice, add the chicken and salt, rice, and pinch of chicken bolion like Maggi. I usually add the sweet soy sauce, " Kecap Bango", you can buy in Asian stores. Yummy!!! You live in Gilbert, so just ride to LeeLee in Dobson Road :))
This food is so good! Dutch people even have the song about this food, " Geef Mij Mar Nasi Goreng" / Give me fried rice :)))
1. I make chimichangas or enchiladas from my shredded chicken. I mix in sour cream, a little cream of chicken soup, garlic, can of diced green chili's and warm up the mixture on the stove. Then I add to the tortillas, roll up, and either bake or fry them.
2. I also add shredded chicken to quinoa with zucchini, spinach, feta cheese and a dressing of olive oil, soy sauce, dijon mustard, lemon juice, and garlic seasoning.
3. I use it to make lunch sandwhiches
4. I freeze it and then pull out later to use in a casseroles

Chicken noodle soup or Chicken rice soup:
heat some chicken broth and cook up some diced onion, celery, and carrots (I usually also add a parsnip for veggie variety). Add the chicken, some parsley and some cooked rice or pasta.
simple chicken cheese quesadilla--heat a pan with some butter or oil, add a tortilla, put the chicken and some cheese inside. Fold in half, crisp each side, cut in wedges, and serve with salsa and sour cream, avacado and tomatoes. I usually add some sauteed veggies inside. You can add cooked green chilies, corn, beans, tomatoes, sauteed squash, bell peppers.
For really easy serve with crackers and cheese. We call it homemade lunchables. You can spruce it up by spreading cream cheese or miracle whip and/or mustard on the crackers before topping with the chicken and cheese. Add a tomato or avacado or onion slice on top if you want.
