Ugh! Can't Decide What to Make for dinner...any Suggestions?

I think I am in a bit of a slump. I just don't feel like cooking. :P I have a freezer full of meat - chicken breasts, whiting, and chicken wings. I also have a lot of veggies, rice and beans. Does anyone have any cool, yummy recipes they'd like to share?

Eat breakfast for dinner.

Shoyu Chicken:
mix together: 1/2 cup Soy sauce, 1/2 cup Ketchup, 1/2 Cup sugar (or less if you want),
mix together. Pour it over the chicken in a pot on the stove, using chicken thighs.
Just cook it on medium-low until it is cooked and the sauce is cooked into the chicken. Stir occasionally as it cooks and so it does not burn.
Serve with rice.
Easy.
Good.
My kids like it.

Or just marinate things, then grill it.
Easy.

Chicken Teriyaki

Mix:
1/4 cup Soy sauce
1/4 cup oil
2 TBSP White wine or Vinegar
2 tsp ginger
1 tsp sugar
1/4 tsp garlic
2 cups rice
2 cups water

Put in Baking dish over 2-3 chicken breasts

cook at 350-375 degrees for about 45 minutes to an hour until chicken is done.

That is it! Enjoy

Tonight we are having chicken salad sandwiches, tossed green salad and sliced cantaloupe. I mixed 3 cups cooked, chopped chicken, 1.5 cups diced onion, 1.5 cups diced celery and 1 cup grapes. Mixed with 1/2 cup mayo, 2 tbs apricot jam, 2 tbs cider vinegar, 2 tbs brown sugar and salt and pepper. It seemed good for a hot day, plus I made it ahead.

What leaps to mind, hearing your ingredients:

- It's a pain (hot) to cook... but I'm a big fan of Buffalo Wings and Spinach Salad. ((It's the whole steaming them part that's really 'hot'. Steam in a big pot until they're cooked through, and then transfer to a baking sheet and bake until golden brown, then toss with Franks Buffalo Sauce - or teriyaki, etc.))

- Fish Tacos

- Grilled Chicken Caesar

Fish Tacos would be the 'coolest'... since you only need to sautee the fish for a minute or two a side, and the whole thing is eaten cold. Then it's tortilla, fish, pico de gallo, cabbage, cillantro, and creamy avacado sauce. Served with Rice'n'beans - I prefer spicy black beans w/ fish tacos & green rice, myself).

Second coolest depends on you owning either an electric wok (to plug in outside, or a deep fryer): Tempura.

Creamy Avacado Sauce
Ingredients
1 avocado
2 green onions, chopped
1 to 2 cloves garlic, chopped
1/2 cup sour cream
1 cups mayonnaise
1 teaspoon green habanero sauce
1 teaspoon apple cider vinegar
1 teaspoon lemon pepper

Directions
To make creamy avocado sauce: Mix all of the ingredients together in a medium sized bowl OR just place in blender.

The kids loved this one, and I made it pretty fast. Just made it tonight for the first time. You need to make sure you cut them into small pieces like it says to do so it'll cook in about four minutes. I have a deep fryer and used olive oil, not corn oil. The kids LOVED it. I didn't make enough for them.

I didn't have sesame seeds like it said. I put garlic powder and onion powder in it instead. I don't know how much to put in. I didn't put enough in. I would try at least 1 tsp to 1 tbs. Next time I'm probably going to try 1.5 tsp of each.

Here are 2 suggestions: bean salad and sausage ratatouille. I just made a big pot of spaghetti sauce myself--it should be good for a few dinners.

Bean salad: 3 cans of assorted beans, well rinsed; a handfull or more of green beans, slightly steamed or raw; half and onion chopped; fresh mint, chopped (dill or parsley works too); oil & vinegar; basil and/or other spices; salt and pepper to taste. This is fast and easy and no heating up the kitchen.

Sausage Ratatouille (sp?): half a roll of no casing sausage meat; olive oil; small onion and a few cloves of garlic; medium eggplant, diced; carrots; celery; yellow summer squash; zucchini or whatever veggies you have on hand. Saute everything in a big frying pan or wok with the olive oil (you might need to add more oil if the eggplant sucks it all up). Rosemary, basil, oregano, thyme are all good in this. It is great over rice and good with pasta too.

I know this won't really help you now and this was yesterday anyway...lol! But I always keep premade tostada shells in the pantry and a couple cans of refried beans. I always have premade salad in the fridge and we are never without shredded cheese. So there you go...cheap, easy and basically no cook! My families new favorite!

I am making Bbq ribs with corn on the cob, rice, and cheesy bread.

With the chicken breast, take tin foil and fold it into a bowl shape to hold things. Place in your chicken, and whatever veggies you like, I usually use potatoes, and carrots. Then add a few teaspoons of water, and your favorite seasonings. I like Garlic, Parsley, Minced Onions, and Pepper.
Fold the tin foil into a "tent" and put in the oven on 350.

Cook for about 30 minutes, and then check on it. When the chicken is cooked thoroughly and the veggies are tender you are done.

Add bread and you are good to go.

Tonight I punted and used some stuff left over from a weekend cookout. The kids had burgers, oven-baked fries and green beans. I had my favorite summer meal - chicken breast or patty with apricot sauce and jalapeno. It's adapted from the Pioneer Woman blog:

Sauce: mix 1 tsp mayo, 1 tsp dijon mustard and 1 tsp apricot jam. If you like heat add a tiny amount of chopped jalapeno.

Grill chicken breast or patty and toast a burger bun (or french bread, bulkie roll, whatever bread you have handy). Spread both buns with sauce, put in chicken, add in thinly-slice red onion and a bit of lettuce, and smash the whole thing together, grilling for a few minutes to get a panini-like result. Delicious, healthy and IMO way better than a cheese burger. I had this with grilled asparagus. Yum!

Do you have olives? Cheese? Sun-dried tomatoes? You can stuff some chicken breasts with black olives and feta, tomatoes and mozarella, spinach and cheddar... Really anything =)

Also, if you have some pasta sauce, you can make a pizza or calzone. A homemade dough is really easy to make!

It's 93 degrees out so we are barbequing pork loin with a Mrs. Dash and Rosemary from the garden rub. With that will be veggie packs of potatoes, carrots, sqash, and red onion. Serve it up with apple sauce.

My mouth is watering....

Best fish recipe I've ever made:

BROILED PACIFIC WHITING WITH GARLIC BUTTER
2 lb. whiting fillets
flour
cooking spray
3/4 cup fine bread crumbs
1/2 cup butter, melted
4 crushed garlic cloves
3 tbsp. chopped fresh parsley (I used 3 tsp. dried)
salt & pepper

Heat oven the 400 degrees. Thaw & rinse fillets. Pat dry. Cut into serving portions & lightly coat each fillet in flour to absorb excess moisture. Place each fillet on oiled broiling pan, skin side down. Salt & pepper to taste.

Mix butter, garlic, & parsley together; then combine with bread crumbs. Sprinkle bread crumb mixture onto top of fillets, patting down as necessary. Broil for 8-10 minutes, watching closely. Fish is done when it flakes with a fork & just loses its translucency.
