Hey does anyone have a simple, delicious recipe for squash? Thanksgiving is at my house for the first time this year and I don't have a good one. Thanks everyone!

Cut open an acorn squash and take out the seeds. Cut a very thin layer off the bottom of each half so it will sit on the pan without rolling. Place 2 tablespoons of brown sugar and one tablespoon of butter in each one and cook at 385 until soft. I then actually swish the sugar-butter mixture around the squash and pour it out in a little bowl that I set next to the squash to dip in. I never eat all the liquid and this is so good.

What kind of squash? My favorite is butternut...cut it into cubes, throw on a baking pan and drizzle with olive oil, salt and pepper. Then roast in oven at about 425. Usually takes 30-45 minutes, depending on the size of the cubes you cut and how well you like it done. You can sprinkle brown sugar on it at the end if you want to make it sweet!

For yellow squash, cut in cubes and put in pot that has a little oil and then put tomato sauce, pepper and a bit of sugar, delicious! Makes a great side veggie dish. I make mine well done. Bon appetit!

Squash casserole----2cups chopped squash 3cups crumbled prerared cornbread 1/2 cup chopped onion 1/2 cup chopped celery 1 Tablespoon white sugar 1egg 1/2 26 ounce can condensed cream of chicken soup 1/2 cup margarine softened 1 cup shredded cheddar cheese divided 1 tsp. sage 1/2 tsp. salt 1/2 tsp. black pepper-------Preheat oven to 350 degrees---- lightly grease and flour medium baking dish. Place squash in a pot with enough water to cover, bring to a boil cook until tender---drain. In a bowl mix cooked squash,cornbread,onion,celery,sugar,egg,soup,margarine,1/2 cup cheese,season with sage,salt and pepper. Transfer to prepared baking dish. Bake in oven for 45 minutes---Top with remaining cheese cook about 15 more minutes until cheese is melted and bubbly.

I was going to post exactly what Alice H. did. My mother used to make this every year for Thanksgiving and it was soo yummy! The only thing she did different, was she just left everything in the squash and we each had our own little squash and just scooped it out as we ate it! Yum!

I was going to also suggest squash casserole, but my recipe is different, and I think simpler, than the one below. It's very tasty, and even my 5 year old who won't touch squash by itself will eat this. We're having it for Thanksgiving this year too!
1 stick butter, melted
3 cups thinly sliced yellow squash
1 pkg cornbread mix (I use the jiffy box)
2 eggs
1 can cream style corn
chopped onion to taste
pepper to taste
Mix all ingredients and pout into 9x13 greased pan. Top with grated cheese and bake at 350 for 30-45 minutes until cooked through.

I just made Paula Deens "butternut squash and corn ", it was pretty tasty and my husband loved it to. It's not a sweet dish, more on the savory side. I would make it again.
