Go for a hike at Red Rock Canyon.
I second the Springs Preserve and Red Rock. Bonnie Springs is out at Red Rock and has a free petting zoo. Also, there are the free outside attractions at the hotels. There is the Bellagio fountains, the TI pirate show and Mirage volcano. They begin after 3:30pm (I think). Bellagio has beautiful indoor flower gardens to tour. Planet Hollywood has an animal show for kids. (not sure about times or cost) Town Square has great shopping, restaurants and a fun play area. Gameworks is on Las Vegas Blvd, if they are into video games. There is also the M&M factory and Coke factory tours.
Have fun!!!
Try the Lied Discovery Children's Museum or the Natural History Museum, in addition to the things the other mamas recommended. Or go to cityofhenderson.com to see what camps may still be available for spring break, if you want to give your kids something to do without you for the whole week. You don't have to live in Henderson.
