What is in your favorite spinach salad? I need a recipe or ingredients

G.:

When I make a spinach salad, I add hard boiled eggs, crumbled bacon, cucumber, celery, cherry tomatoes, carrots and maybe walnuts or sunflower seeds - depends upon my mood.

Dressing is:

2/3 cup sugar
1/3 cup cider vinegar
1/3 cup canola oil
1 small onion, finely chopped
4 teaspoons prepared mustard
1 teaspoon salt
1/2 teaspoon coarsely ground pepper

mix it in a blender and serve over salad...

I have also been known to add grilled chicken on the side...

As you can see - when I make spinach salad - I use things found in a "regular" salad....

Baby spinach, maybe some romaine lettuce, strawberries, blueberries, walnuts or pecans, blue cheese (or goat cheese) and poppy seed dressing. Newman makes a low sugar one that I have had trouble finding.

I sometimes add red onion or bacon if I am in the mood.

Baby spinach
Crumbled real bacon (not bacon flavored soy bits)
Feta cheese
Purple grapes, sliced in half
Walnuts
Toss lightly with olive oil and balsamic vinegar

Strawberries, candied almonds, Feta and strawberry vinaigrette
OR
roasted corn, cheese, tomatoes, avocado and salsa for dressing (if you don't like just the salsa, mix it with a ranch)

I do one with sliced strawberries, slivered almonds and a basic balsamic vinegarette. You can add crumbled feta too but I usually don't because of the extra calories and fat.

Add blueberries, mango and feta cheese. Toss with light amount of raspberry balsamic vinegrette.

You can also sub the blueberries and mango with just strawberry and feta.

We have nut allergies so we don't add any nuts but I'm sure a walnut or seasoned pecans might add a touch.

The best spinach salad I ever had was at my dad's wedding reception. It was baby spinach, mandarin oranges, avocado, and candied pecans (or walnuts) with a very simple vinaigrette. It was so yummy!!!!!
