When making the filling I also add in some cinnamon and nutmeg and a about 1-2 tbsp tapioca as that is the best thing to add to keep it from being runny. (tastes better than flour or cornstarch) I make the bottom crust and then put in the apples (chopped pretty small). Pour half the liquid over the apples. Top with a lattice crust and pour the remaining filling over the crust and it leaks down to the apples. When it bakes it makes the crust taste awesome.
