Replacing Processed Cheese!?!?! HELP!

I'm making broccoli soup (right now), and the recipe calls for processed cheese (oops) and I don't have or want to use processed cheese. Can I use cheddar instead?

So What Happened?

Phew! I put in half the cheese, and then ran it through a food processor to smooth it out (it did get clumpy). Turned out good!

Cheddar cheese in broccoli soup is wonderful. Go for it!

No oily slick, I use cheddar all the time for cream of brocc or cream of cauliflower soup.

You can use chicken broth in the soup. DON'T boil it or it will break down.

Also, you will probably have to take the soup off the heat to add the cheese otherwise it might get stringy. Of course the soup will still be hot, but I think having the direct heat is the issue.

You can google alternative recipes by listing the first 3 ingredients. You'll find better options.

I never use processed cheese. I use real cheese in all my recipes and they turn out fine.

You can, it will change the consistency and you will find an oil slick on the top but it should be easy to remove.

Oh, it isn't a recipe that uses the cheese food as the base is it? Then you may have problems.

I've made cheese soup with cheddar and it turned out smooth. No need to run it thru the food processor. I shredded the cheese and added it a small amount at a time, stirring constantly.
