Well, I bought an entire package of chicken legs because they were on sale, and I was thinking fried chicken sounds SOOO good, but I don't want the mess. I'm going to bake them, I guess. We want to have them for lunch...
What do you do with them? What's your fav recipe for chicken legs? How long do you bake, etc?

I love fried chicken legs...I made it Thursday night for dinner! You are right - it's a mess!!
For baking? I love to put the Liptons Onion Soup mix on them and maybe some Parmesan cheese and bake them for 30 to 45 minutes at 375!

Depending on how high of a fat content you want, either roll them in sour cream or dip in chicken broth (I love this, but the corn flakes don't stick as well). Have several cups of smashed up corn flakes, Lawry's season salt and some other seasonings of your choice in a bowl or on some wax paper and roll them in that after the sour cream or broth. Place on a cookie sheet (spray with Pam) and bake for 20-40 minutes (depending on size of legs) on 400. I hate chicken legs, but my husband and boys LOVE this!
Just throw 'em on the grill with some BBQ sauce. Easy and no kitchen mess!
my recipe is the easiest. i wash, dry the meat. put in a pan of your choice. then i mix lemon juice and some olive oil. rub that onto the chicken. use your favorite spice on top of them. then pour 1/4 cup of chicken broth. heat oven to 375, bake covered for 30 min. take out the aluminum foil and continue baking to your liking.
Bake chicken at 375. I coat mine lightly with evoo and salt and pepper. Cook on cookie sheet tray covered with foil.
Legs - 45min-1hr (I like to flip them half way thru)
Leg quarters - 1hr
Split chicken breast - 1hr 15 min
I love baking chicken. It's super easy, fast and delicious!
I always buy them at Walmart and boil them in a large stock pot. I take them out but keep the water simmering. I de-skin them and de-bone them and add those things back into the simmering water. I chop, mush, or tear the chicken into bits and then divide them equally in to quart size freezer bags. I use some for chicken and noodles or dumplings, some for sour cream chicken enchiladas, etc...you can just pop them meat into what ever dish you are cooking and it goes much faster since the meat is already cooked.
I take the water, it's now a wonderful hearty broth, and drain it in to a large pot by using an kitchen hand towel or some cheese cloth. It can be messy if you don't pour slowly. You can take some of the larger bones and stuff out with a slotted/holey spoon if you want to first. I always check the debris to see if I missed any large pieces of meat too. Then discard the junk. If you want to cool the broth then skim off the top layer of fat you can do that by just letting it sit for a little bit then put it in the fridge. When it's cold the fat will peel of quite easily.
I put it in gallon or quart size freezer bags and freeze it. I pop it in the pan by peeling the bag off of it. If you keep your bags then just sit the whole thing in some very warm water to melt the outer broth then it will slip/pour out.
I put a bag of broth in the pot, add some chicken, then when it starts to boil I tear biscuits up and drop them in the boiling fluid. You can season these chicken and dumplings however you like them but I like mine with just a bit of salt mixed in. I cook the dumplings a few minutes then eat. Same with the Reamus frozen Noodles, just keep the broth boiling and add them then cook them how the package says.
wow coincidence lol. I just bought a huge pack of chicken legs for the same reason. Right now in the crock pot I put a couple of them in with rice, red cabbage, tomatoes, satueed onions and peppers, diced apple, chicken broth, white wine, garlic, and crushed red pepper. You can also boil them in some chicken broth with rice or noddles and veggies and then shred them once they are cooked to make chicken soup. I also like just placing them in the crockpot on top of some veggies.
Here's a few ideas. Marinate in Italian dressing for a few hours and grill.
Or, mix 1/2 cup soy sauce
1/4 cup canola oil
2 tbs chili paste
2 tbs lime juice
2 tsp fish sauce
1 minced clove garlic
1 tbs minced fresh ginger
Marinate for several hours, grill or bake ucovered at 375 for 1 hour
Serve with basmati rice, yummy
Can't you just grill them? That's so much easier, no messy pans and they'll taste great.
That's what I would do.
I just salt & pepper, bake at 425, on a broiler sheet so they get crispy instead of soggy. If they reach 180 before they're crisped up I just turn the broiler on for a minute or two to crisp them up.
