Pot Luck Dish Ideas?

Myself, my husband, and my daughter have been invited to a friend's "BBQ / July 4th party". It is a pot-luck and I'm looking for ideas of what I can bring as my dish. It can be something to cook on the grill, or a side dish... I just want to do something "different", but it has to be EASY because I'm horrible in the kitchen! LOL

Caprese salad is easy easy.

Fresh mozzerella balls (small, same size a cherry tomatoes)
Cherry tomatoes
Basil leaves
Salt & Pepper
Olive oil

Drain mozz, rinse tomatoes, roughly chop the basil.
Dump into a bowl, stir around, drizzle olive oil, sprinkle with salt and pepper. Done. And gorgeous. And sooo yummy & summery.

I like to bring stuff that most people have never tried. However, I don't know your crowd so I will recommend a great pasta salad
1 bag large shells or 2 if you have a large group
1 small red onion (adjust to 1/2 if you can only find large)
1 can black olives, chopped or sliced
1 large jar of marinated artichoke hearts drained but not rinsed
garlic powder ( I use about 1/2 a cup because I LOVE garlic but you can use as much or little as you'd like)
Newman's Olive Oil and Vinegar salad dressing

Combine all ingredients the night before. It's important that the salad sit and "marinate" overnight... stir it up ocassionally ,but don't feel glued to the house for it.
Save me some! I'll be right over.

I watched an episode of Rachel Ray where she made Barbecued Succotash. I've made it at every bbq we've had since and everyone loves it because it's delicious and it's super easy!

Hi S., Potato salad, deviled eggs, baked beans, water melon, fruit salad, green salad. If you are not a wiz in the kitchen go to the store buy a tub of potato salad or macaronni salad, put it in your own decrative bowl, add a little lemom peper or paprika, and walla you have a hit.J. L.
