Ok, so I love Nachos! I don't often eat them, but I love them. I sometimes try to make them at home and they are ok but not great. What's your secret to making great nachos at home?

Nachos are a family favorite at our house. The way we make them is time-consuming, but so worth it!
Here's what we use:
-Tostidos scoops
-ground beef, cooked with taco seasoning
-shredded cheese
-black beans
-"tamed" sliced jalepenos
-sliced olives
Lay out chips on cookie sheet in even layer. After cooking beef w/ seasoning, put a small spoonful in each chip. Add small amount of beans, olive, a jalepeno slice, then top each chip with cheese. Bake at 350 degrees till cheese melts. These are the yummiest nacho "bites", we dip them in salsa and sour cream :)
Oh, we make the best nachos!!! Yum, and it's funny, we just had them tonight for supper.
Brown a pound of hamburger, and I use Old El Paso taco seasoning...not in a packet, but you can buy it in bulk in a shaky can (like parm) so you can season to taste. Instead of the recommended small amount of water, fill your skillet with water after browning, add your seasoning, and let it reduce. Much better flavor.
Then I set out chopped onions, tomatoes, lettuce, sliced black olives, pickled jalepeno slices, sour cream, taco sauce, chili sauce, etc.
For cheese, I buy "Ricos Salsa de Queso Cheddar Gourmet! Nacho Cheddar Cheese Sauce with Jalapeno Peppers" (kind've a long name, find it usually in the ethnic aisle) and I put it in a bowl and heat it for about three minutes.
We prefer Mission brand tortilla chips.
Personally, I like my plate the best...I smear sour cream on the plate, then load with the taco meat, lots of lettuce, some tomatoes and black olives, and cover with the hot cheese. Because I'm nursing, I'm not currently using the jalapenos, but they're great too.
What a messy meal...yum...I'm just thinking back to supper!
The one's I've eaten seem to use Velveeta cheese on top, salsa...

Cover a cookie sheet with aluminum foil (unless you really like scrubbing) and layer with your choice of the following:
tortilla chips
ground beef, shredded beef, or shredded chicken
Shredded cheese (cheddar, Monterey Jack or a combination of the two)
pinto beans or dollops of refried beans
diced tomatoes
diced onions (green or white taste best)
jalapenos
Place under broiler watching constantly, remove when cheese is melted.
Serve with:
guacamole or diced avocados
sour cream
salsa
** For my ground beef, I brown the beef, stir in chili powder (approx. 4 Tbs for 1 lb. of beef) and add about 1 cup of water and reduce until dry.
** for shredded chicken or beef, I marinate in fajita seasoning, and grill or bake and then shred the meat.
The secret to perfect nachos is....Rotel!
Mix your can of refried beans and Rotel together and cook on the stove. Line a baking tray with foil cover with tortilla chips. Cover each chip with a dollop of beans and then add shredded cheese on top. We also add a jalepeno slice on each one (we LOVE spicy) and bake in the oven. They don't take long. Just look at them and you can usually smell them. In fact, I think that will be our lunch today. Thanks for the inspiration :-)
