What to do with all these onions!
I need some recipes that use vast quantities of onions and actually taste good. My Dad dropped of two large (2 gallon size, I think) bags of onions from his BS trip this past week. There are chopped onions and then onion slices.
My only other option is to freeze them. Can you freeze pre-cut onions? If so, for how long?

Yep, just freeze them. Veggies are frozen all the time, and those pearl onions.

Yes, chop up a bunch and freeze them; then you can use them in soups and stir fries when needed. You can also cut and dehydrate them. Store the rest in a cool dark place so they will last you a while.
Some food ideas with onions:
Stir fry or curries
soups: chicken noodle soup, chili, minestrone, potato soup, pretty much any soup really!
kabobs with meat, peppers, onions, mushrooms etc
pot roast with potatoes, carrots and onions
sandwiches
breakfast potatoes with chopped onions, peppers and sausage
omelets with veggies
salsa- fresh or canned
French Onion Soup
Caramelized Onions
Batter Fried Rings, or breaded if you prefer
on kebabs on the grill with meat
stuffed baked onions
swiss steak
or send 'em down to me, I'll use them!
Sure, I'd freeze them, the chopped ones in a ziploc.

i recently had the same problem, i froze some, made soup, made salsa, chili,....ugh, ended up throwing asome in the garden

We do french onion potatoes. Make mashed potatoes(however you like them).Then you slice and sautee onions in butter, after they are translucent and some minced garlic. When they start to brown add beef broth, 1/4 beer, 2 tbs dijon mustard and a squeeze of honey. Let it simmer until it is reduced by half. Then you top the mashed potatoes with the onion mixture and then top it with provolone or swiss cheese and pop it in the oven until its slightly brown and bubbly....its not really so good calorie wise but oh so yummy!

They are good with lettuce and tomatoes on all sandwiches.
We love grilled onions! Place a small amount of Olive oil salt and pepper, wrap them in foil, place on the grill, cook for about 10 minutes.. yummy!
Or saute them in a skillet and eat them with steaks or chicken,.
Great suggestions! I wonder if you could dehydrate them and make onion flakes/powder. I would also check Allrecipes.com and type in onions.
I have a great slow cooker recipe called "chicken with 40 cloves of garlic". I spray pam all around the slow cooker, then line the bottom with 2 large onions, sliced. In a separate dish, I mix together:
8-10 boneless skinless chicken thighs
2 tablespoons paprika
1 teaspoon black pepper
(can add salt but I don't)
40 garlic cloves, skin removed
1 tablespoon olive oil
Add this mixture over the onions.
Cook 4-6 hours on high or 6-8 hours on low.

they wouldn't last in my house we eat onions in everything. I am thinking onion rings and my favorite cook them in chicken broth. too die for. then you have salads and hamburgers burritoes and macaroni salad and many other things. All salads need ot be loaded in onions it is a must. yum send some my way too.
I have chopped and frozen onions lots of times. I also dehydrated them chopped and rings.
When I freeze mine I chop them and then put them into snack baggies, about how much I will use freeze them then put the baggies into a larger freezer bag and store. (I tried once to just freeze the baggies all in the large bag and then they didnt want to come apart! oops!) I have frozen them for MONTHS, upwards of 6.
When I dehydrate them I am lucky enough to have a dehydrator and I chop and mince them or slice on the mandolin and spread them as thin as I can (plastic wrap on the plastic of the trays makes the trays not stink!) and let them go till they are dry. I tried last time to make onion powder but I think the grinder I used was just not the right one, I have to try again in either the normal food processor or in the coffee grinder (not like I use it for coffee anyway) and see if that works. Once dry I use them as I would onion flakes, if making sauce I just put them into the pot with some water and let them plump a bit on medium heat then go at making my sauce (my picky father was shocked that I used them the last time! gotcha dad! lol)
