Lunch Ideas - Phoenix,AZ

I stay home with our 2 year old and am running out of ideas for lunch. I think my problem is just over thinking it! =) I forget about the simple meals and end up making it a big production. My daughter is a healthy eater, so, no problems with that. Though, she doesn't really care for meat. What ideas do you guys have for easy and healthy lunches? Thanks!!!

Sandwich and fruit or veggies or yogurt and banana bread. Whatever you are eating really. Leftovers are always good to use up too. Bananas rolled in wheat germ are a good snack as well as P.B. with celery and craisins or raisins on top.

Hi. I too am a stay at home mom of rather picky 4 year old. She does not eat meat and would rather eat fruits and veggies over chips and candy (thankfully!) I try to include protien, a healthy grain, healthy fat, fruit and veggie to each lunch. One of her favorites is cheese and crackers along with cherry tomatoes and cucmber slices with ranch dip. She loves to make fruit salad, so we have this for "dessert" often. She also loves soup (although I have to remaove the meat), so we pair it with a cheese stick. I will use cookie cutters to cut out fun shapes of bread and let her help spread peanut butter on them and arrange veggies/fruit in various shapes on her plate to make the same old lunches a little more inreresting. My kids like mac & cheese with either canned tuna or canned chicken mixed in ... or we have even tried bacon in it... My one son loves left over hamburer (crumbled from tacos the night before) mixed in...

Maybe instead of peanut butter and jelly sandwich, peanut butter and honey.

And to put a turn on grilled cheese sandwich, use a flour tortilla with grated chz, and just microwave it for a few seconds. You can add bacon or scrambled egg or both. Whatever you can think of that she likes let her think of something to add. I came up with some of these because I have VERY picky eater..

I have 22 month old twins and tend to have the same problem sometimes. I have started to make turkey and cheese rollups - turkey lunch meat rolled around slices of cheese. They also love yogurt. They also like cucumbers so I dip those in hummus and give it to them or they can have peanut better and jelly.

my kids are happy with bean burritoes with cheese and sourcream. They don't care about variety!

I am in the same situation, but I think a little worse. I have to sneak veggies into the meals because my kids do not like them! They help me with cooking. Whether its sprinkling cheese on their pizza or mixing. We make mini pizza together using bisquits. I add tons of veggies on mine hoping they catch on. I also make my own teryaki sauce and baste it on chicken breast with rice. grilled cheese with soup. Mini quiche using a cupcake pan. The kids love this because they add whatever they want and they eat their creations.

If we don't have leftovers, we usually eat fruit - oranges this time of year. Or we have some raw vegetables.
