"Haupia."
Look for the recipe online.
Here's one:

It is easy.
It is a typical Hawaiian dessert and used at Luaus.
Uses coconut milk.
It is like a jello type consistency.

I know, I am from Hawaii.

Upside down Pineapple Cupcakes - maybe not Hawiaan but with the Pineapple it seems appropriate.

Since when do 5th graders have a dance? I thought that was a middle school thing.

Oriental Trading usually has great party things reasonably priced.

I would incorporate pineapple somehow. Maybe fruit kabobs, coconut macaroon cookies, etc.

How about lots of fresh fruits and jello of different flavors? of course you have to have some whip topping too :)

Since the kids may not like the true Hawaiian food served at a luau, you
could do some things w/a bit of flavor:

-grilled chicken w/grilled pineapple slices (cut both into bite size pieces)
-serve w/white rice
-or chicken nuggets w/pineapple chunks
-mini cupcakes
-pineapple juice in fake coconut cups
-coconut haystacks
-have a hula dance
-you could get a few cheap grass skirts & have the kids share them
-buy leis. You can find those cheap.

Have fun!

Fresh fruit kabobs, especially with pineapple.

You can also make a fruit dip with plain yogurt, cream cheese, crushed pineapple (equal amounts in oz) and a small amount of sugar.

Coconut cream dessert bars.

Little Smokies cocktail weiners and/or meatballs in sweet-sour sauce.

Love the idea of using Spam in some way!
