Lowfat Lunch Suggestions for Company (Slow Cooker Preferred)

I'm having a good friend of mine & her teen daughter over in December for a day of visiting. I have to pick them up, they live an hour away, so that will mean 2 hours I'll spend on the road just to pick them up and bring them to my home. (We can't hang out at her house because she's living in a studio apartment right now.) I would like to serve a hot lunch since it will be winter and probably cold & raining. We plan on catching up, hanging out in front of the fireplace, maybe watching movies or doing arts-and-crafts projects and/or possibly baking. I would like to have something going in the crockpot prior to leaving. I just don't know what to make that's company worthy. We're both trying to lose weight so that complicates things as well. I also need something that is kid friendly. Any suggestions?

Throw in a few chicken breasts and a jar of salsa; let it cook on low a couple hours. Pull it apart and let it cook just a little longer to get the flavor all thru the chicken. Slap some on a tortilla with a little low-fat sour cream and shredded cheese; roll it up like a burritto and you're good to go! Delicious, healthy and low-fat!!

Just be sure to use a slotted spoon to serve so you don't get too much juice onto the tortilla.

We eat this, and my son loves it. I used fresh pineapple, instead of canned. I'm sure canned tastes the same way! I've done it with both regular sauce, and the kind in the recipe. they were both great! I usually serve it with a big salad. You could do french fries, or any other side for the kiddos.

We like to do BBQ chicken, not sure of the low-fat though - you'd have to check the BBQ sauce you use. But you put the chicken in the crockpot and let it cook. Pull it out after a long time and pull it apart, dumping out all the liquid that may have accumulated. Add the BBQ sauce and cook until you are read to eat. Serve on whole grain buns or rolls, sliders to make it smaller serving sizes or make wraps. Yummy.
