I am looking for a good bread recipe. One that doesn't take all day or any special mixer.

Need more info. Do you like oatmeal? Potatoe? Or just a nice plain basic bread recipe. I have one that I make everything from. Bread to cinnamon rolls to crescent rolls. You can always change a recipe and add whole wheat or oatmeal.
I do make this in a mixer but it would be asy to hand make also. I use quick rise yeast. Therefore there is no "proofing". I mix a small amount of the flour and the liquids and stir this for a bit. You could even do this with a hand mixer and then mix in the rest of the flour by hand.
6-6 1/2 c. flour
2 pkgs. or 4 1/2 tsp. yeast (quick rise)
3 tbsp. sugar
1 tsp. salt
2 c. milk, warmed to 120-130
1/4 c. butter, melted in milk
2 eggs, slightly beaten
Place 4 c. flour in bowl with other dry ingredients. If you would like some whole wheat replace 1-2 c. flour with whole wheat flour. Mix the dry ingredients a bit. Add the warmed liquid (milk and butter) mix slightly and then add the eggs. Mix well for at least a couple minutes. This you can do with a hand mixer as well. Gradually add more of the flour until the spoon no longer works then turn out and knead. Knead for at least 10 minutes. You want the dough to be very pliable. Do not add to much flour. Place in a greased bowl and place in a warm place and let raise for at least one hour or until double in size. Punch down and make bread or rolls. For bread I think it makes 2 loaves. I bake at 350 for about 30-40 minutes. Or until bread sounds hollow when tapped. I make more cinnamon rolls with this than anything. Yum. Feel free to contact me.

This is a neat recipe - it is a no knead bread that when done looks like an artisan loaf. I wouldn't say it is for sandwiches but is good for dinner with pasta or salad. It takes some planning as it needs to rise for 19 or so hours but is pretty easy. When I make it the dough is always an gooey mess so don't worry if that happens, just keep going with it and be surprised how it works out. Also, I can't find "instant" yeast anywhere quick rise seems to work well.

I got this recipe from my aunt and it is really good!

French Bread
I learned that you can serve anything for supper if you have fresh bread to go with it!
1 ½ c warm water
1 pkg yeast ( or 1 1/2 T)
2 T sugar
3 T melted butter or margarine
2 tsp salt
1 egg white (room temp)
4 – 5 ½ c flour
• Knead, let rise, knead, shape and put onto lightly greased cookie sheet, let rise again
• Bake at 400 ˚ for 20 min on cookie sheet

Here's one of my favorites, it's 100% whole wheat, but soft like white.

Whole Wheat Bread
2 cups warm water
1/2 cup sugar
2 tbsp. yeast
1/2 cup shortening
1 tbsp. salt
5 1/2 cups whole wheat flour (or however much you can knead in, I usually can't get quite the whole amount in)

Add sugar to warm (not boiling) water, stir in yeast, and add shortening by spoonfuls to allow it to soften. Cover until yeast is dissolved. Add flour and salt, and knead for 5 minutes. Cover and allow to raise for 10 minutes, punch down, and repeat two more times. Shape into two loaves, allow to rise in greased loaf pans, and bake at 350 degrees for 25 to 30 minutes, or until golden brown.

This is a potato bread recipe, half white flour, half wheat flour, that my family loves. If they could I think it would be all my kids would eat. :) All together I find it takes about 1.5 to 2 hours to do and I get two loaves of bread. If you want to make it with all white flour I would add an extra half cup, if with all wheat I'd take it down by half a cup.

In small bowl:
1 3/4 cups very warm water
1/3 cup sugar
1 Tbsp yeast
mix water and sugar, then sprinkle yeast on top, cover and set aside

In large bowl:
2 cup wheat flour
2 1/2 cups white flour
1 cup instant potato flakes
1 tsp salt
Mix and set aside

Add to water/sugar/yeast:
1/3 cup oil
2 eggs
gently mix then add to flour mixture

Mix and knead till dough is warm and soft. Cover and let rise till you don't feel like waiting any more (I can usually make myself wait about 45 min., I hate waiting for bread to rise:)). Shape and place in bread pans (you can let it rise again while you preheat oven), bake for 30 min. @ 300 degrees.

Hi L.,

I have a super easy, way yummy bread recipe for you!

Beer Bread

2 2/3 C. self-rising flour
12 oz beer, freshly opened, chilled or room temp

Heat oven to 375. Lightly grease a loaf pan.
Combine ingredients and stir with a rubber spatula just until flour is moistened.

Bake 50-55 minutes unitl top is lightly browned, sides pull away from pan and pick inserted near center comes out clean.

Variations:

Cheddar Scallion-Mix 1 C shredded sharp cheddar, 1/2 C thinly sliced scallions, and 1 1/2 t. poultry seasoning with the flour, then add beer.

Olive Parmesan-Mix 1 C. olives, coursley chopped, 1/2 C. grated parmesan, and 1 1/2 t. italian seasoning with the flour, then add beer.

Is there a particular kind of bread you want to make? Any bread takes a while because of the kneading and the rising. If you don't have a good, strong mixer with a kneading attachment, you may need to do the kneading by hand, which adds to the time. I can do a pair of loaves of bread in about 3 hours (using a mixer to knead it), which is great if I have other things to do during that time.
