Leftovers...chicken & rice...can You Give Me Some Ideas?

I have leftovers. I don't like food to go to waste so I was thinking (gasp!) to make some chicken and rice soup. I've made chicken noodle soup out the wazoo - but I've never made chicken and rice soup....

My rice is already cooked - will it get too soggy and yucky if I make it together?

How do you make chicken and rice soup?

If you didn't want to do soup - what would you do?

When I make chicken and rice soup I always heat up the rice seperatly and place it in bowls right before the soup goes on. It will not get soggy that way.

Me personally, I would put some black beans, salsa and cheese in it and stuff tortillas with the mixture. :)

I agree with Janine G - lemon chicken soup is amazing! My husband is Turkish, and this is a common soup there, but it's also a well known Greek soup called Avgolemono. It might sound weird if you've never had it, but it's sooooo good especially on a cold day. I usually cook the rice with it, but if you've got the rice already cooked it will be even easier. Here's how I would do it with already cooked rice & chicken:
Heat 6 cups chicken stock (I like the stock-in-a-box) with 2 T butter. While it's heating, take 4 egg yolks and beat them with the juice of a lemon. When the stock has heated (not boiling!! very important!), slowly add about a cup of hot stock to the yolk mixture, stirring well. Then add the yolk mixture back into the pot. DO NOT BOIL or the eggs will scramble. Heat gently for about 5 minutes to cook the eggs, then add your diced chicken and rice and just heat through. Taste and add salt, pepper, and more lemon juice to taste. Enjoy!
p.s. - if your chicken and rice has strong flavors from the previous meal that you feel would clash with the lemon, I'd proceed with someone else's suggestion...but if it's fairly simply spiced then the soup should be good!

I'm not a big fan of chicken and rice soup. I would make it into a stir fry or jambalaya.

Maybe like a gumbo? Chicken and tomatoes all seasoned up with onions and celery, maybe some okra if you like it, served over rice?
Chicken, broccoli and rice casserole covered in cheese - I would use cream of chicken in the casserole.

I would make a lemon chicken soup and then add the cooked rice at the end for a few minutes, right before I serve it. Get some chix broth, some lemons to juice, and it makes a great light soup. Add the rice and serve. My kids love it.

I also stuff peppers with whatever left overs I have. I would shred the chicken, mix it with the rice and add some sort of red sauce. Cover with cheese and bake it.

I cook the rice then add it to the finished soup...same with the pasta in wedding soup. So just make your soup as usual, then add the cooked rice last.

Chicken fried rice or a chicken and rice casserole are other good options.

If you want soup I'd start by sauteeing some onion and garlic, add your broth or stock and bring it to a simmer, then add any fresh or frozen veggies that sound good after they cook, then add any leftover or canned veggies and your chicken and rice.

Casserole it... stick it in an oven.
Then the rice won't get all soggy, from being in a soup.

Put diced tomatoes over it, olive oil, herbs and spices etc.
Add some eggplant.

In a bake dish, spray it with butter flavor pam
Put the rice in a first layer
Chicken in second layer
a lot of no sweet whipped cream
thick slices of butter, salt and pepper and if you like it fresh grounded nutmeg
and a lot of swiss cheese
Put it in the oven until the cheese is completely melted and even start looking "golden"

heat them up in a frypan with soy sauce an onions, , then roll it up inside egg roll wrappers and deep fry.

I use leftover rice to do a curry rice stir fry.

1 carrot, peeled and chopped small
1 stalk celery, chopped small
olive oil
salt & pepper
curry powder
dried parsley flakes
1 cup brown or country blend rice, cooked

Stir Fry it all in a wok and season to taste.

Hi Cheryl.
Some ideas for next time:
1. add raisins and shredded almonds and a tad of butter, margarine or olive oil (yummy!
2. Add apricots, peas and a dab or orange juice and butter/margarine/olive oil.
3. add a tad of honey/date honey to the chicken
4. put in a fry pan and stir fry with soy sauce and some frozen veggies. add rice last.
