I often make fried rice from leftover pork tenderloin. Just chop it up, add some steamed rice (any variety--we like brown rice), a bag of frozen vegetables and a couple of eggs scrambled up in the pan. I use stir fry soy sauce (purchased at Asian market) but you can use regular soy sauce--just add to taste. Throw it all in a skillet with a little bit of oil and stir fry until everything is heated through and a little crunch/crispy.

Shred it or chop it up, use it to make BBQ sandwiches (just BBQ sauce and toasted buns) a stir fry with either rice or noodles & veges, or make pork tacos, enchiladas or burritos.

I would make souflaki - I know I spelled that wrong, but it's how it's pronounced :).

I mix sour cream, paprika, garlic, dill, and finely chopped and seeded cucumber for the sauce. Get some pita's and add the sauce, pork, finely chopped red onion (if you prefer), and diced tomato.

I just made a bean soup with leftover pork...it had chicken stock, 4 kinds of beans, can of chopped tomatoes, onion, a little lemon juice and a bunch of curry type spices...tumeric, garam marsala, ginger, cinnamon, paprika, cumin, salt and pepper. At the end add a bunch of fresh chopped cilantro. Serve with some crusty bread.

No real recipe needed. I would shred it and mix it in BBQ sauce for sandwiches. Or chop it less finely and add it at the last second to a stir-fry (you can get lots of combinations of frozen stir-fry vegetables if you don't want to prep a lot of veg; some even include sauce packets, or make your own). Or chop and mix it into rice seasoned any way you like. If you have lots of tenderloin, freeze some of it for later!
