We have family in Boulder, some things we've enjoyed (depending on the age of the kids are:
The apex center in Arvada... ice skating rink and full indoor water park. Great summer fun, even in the winter

Butterfly Pavillion

Water World, outdoor waterpark... we were there ALL DAY and only saw about 2/3 of it.

As you can see already, there's lots to do in Denver! You don't say how old your children are, there are sports, history, culture, and just plain fun. Take the suggestions you have, and also go to the web sites. If you have enough time, come down to Colorado Springs, too. And definitely drive around in the mountains!
Expect cooler temps than Southern Cal - particularly in the evenings. Take sweaters or jacket just in case. Expect thinner air (they don't call it the Mile High City for nothing!).
We were in Denver about 3 weeks ago. LOVED it. We went with a 5 year old. The zoo is FANTASTIC, the science and natural history museum is excellent. The food is great -. There was a post maybe 2 weeks ago about this question and the poster got some good ideas. You should be able to find it in the archive. If you stay downtown there is a free bus every 90 seconds up and down the 16th street mall - an open air pedestrian mall with tons of restaurants and shops. The regular mass transit (bus and light rail) is also super convenient and easy to use. We did not rent a car (we were there for work so only had evenings and 2 days to play.
My brother lives in Denver & we are going to visit him next week. We love it there. We have two little ones (9 & 6) and we always have a fantastic time. The Zoo is wonderful and Estes Park is gorgeous. Check out The Stanley Hotel if you're a fan of The Shining. We're going to do the night time ghost tour there this time. Can't wait!
