Help with Dinner, Please

I have a few things left in the pantry that I can cook for dinner tonight but I don't know how to put them "together". I will not be able to make it to the store for anything (no money, not even a dollar, so I have to make dinner with what I have). Ok, I have
1. 3 lb. bag of frozen chicken breasts
2. Rice
3. 1 pound of mozzarella cheese
4. Milk
5. Sour cream
6. 2 cans of cream of mushroom soup
Ok, that is it. So, can I make a casserole? How would I go about doing this without having any vegetables? Any suggestions would be greatly appreciated.

something i love is putting the 2 cans of cream of chicken (or in this case mushroom) in the crockpot with 3/4 can of water, 4 chicken breasts, and cook it up. serve it over the rice and save the milk for the kids to drink with dinner. you can take what chicken you haven't cooked and cook it (season it first with whatever you've got; at least salt/pepper) in the pan and then shred it up. you can eat that shredded chicken with some cheese, the sour cream, and whatever else on a tortilla when you get some.

Are you cooking all 3 pounds of chicken tonight? That is ALL that is in y our pantry? No boullion cubes, etc? You could use the boullion cubes with water and the rice for a chicken rice casserole. If that is a no go....and these are the ONLY ingredients in your house.....

Here is what I would do.

Boil all of the chicken and shred it.That way you have some leftover that you can eat. If you get to the store later, you can have a shredded chicked sandwich or just shred chicken and cheese.

Make some rice.

Save the milk for your little ones. How long until you get some food? Every time I have extra cash, I stock up on pantry items that won't go bad. Soups, can veggies, etc.

I would just do chicken and rice. If you dont have any salt or pepepper to add to the chicken than pour the mushroom soup over the chicken it will give it flavor and keep it moist. One can should be plenty. Save the milk, sour cream and cheese. Next time your at the store a cheap,easy and healthy meal is a can of refried beans, cheese, and tortilla. Make a bean and cheese taco in the microwave. Kids love it and it has plenty of protein on a budget.

You could definitely do a casserole or just a bake. Defrost your chicken. Put the rice in a casserole dish. Mix some cheese and milk together with the rice, top with the chicken breast. Bake at about 350 for about 45 minutes. Skip the sour cream. No veggies, but it's not gonna hurt for one night.

I know my family loves it when I cook chicken and cream of mushroom soup and put it over rice. I take the soup and chicken and bake at 350 for about 30-45 minutes (until the chicken is done). Then you can put cheese over it if you want. I then put that over rice and it is delicious! I hope this helps.

I would just bake the chicken, steam the rice and call it dinner. If you had a can of cream of mushroom or similar you could put it all together (minus the sour cream and milk) and bake. I'm not very creative with that kind of stuff though.
