Hey I have been waiting for everyone to send in dessert recipes. Summer is coming soon and all those picnics and covered dish dinners. So I am requesting for all of you out there to send in some healthy easy dessert recipes. One of the easiest for me is my version of fruit pizza. You get one of those refigerator cookie doughs from the store; then you press it onto a cookie sheet and bake. Then mix an 8 oz block of cream cheese (you can use low fat if you wish) with either some confectioners sugar or sweetened condensed milk and spread your mixture onto the cooled large cookie. Then you can use whatever fruit you and your family like or what is in season... you can even use canned fruit if you really want to... you can make pictures or patterns... I can't wait for strawberry season to do this. If you want you can even drizzle chocolate syrup on the top. FRUIT SUGESTIONS: strawberries, blue berries, bananas (don't forget the lemon juice), pineapple, manderine oranges, grapes etc etc etc

Fresh strawberry pie is always a hit around here. Just fill a premade graham crust with fresh strawberries. Boil 1 cup water, add 1 tbsp corn starch and 1 package strawberry jello. Add 1 cup cold water. I usually let it cool and thicken a bit before I pour over the pie. If it is hot... it will soak into the crust and make it a little gummy. Let it set up in the fridge and serve it with ice cream or whipped cream.

I've never tried it, but I'm sure you could use any type of berry or fruit providing its good and ripe.

S. - I'm a Type II diabetic and found this recipe to be not only easy but low in sugar, fat, and carbs. It's my own concoction of grocery store products. Here you go - E.'s Chocolate Mousse. Blend together Sugar-free instant chocolate pudding (large box) and 1 quart of Heavy Whipping Cream. Add enough water to make the mixture creamy but yet thick enough to use in a piping bag. Get out your prettiest wine glasses and pipe the chocolate mixture into the glasses. Leave some room at the top of the glass, about a half inch, and pipe in Sugar-free Cool Whip. Last but certainly not least, top each glass with a fresh strawberry. Note: You can make these ahead of time if you are having guests over. Just wait until you are ready to serve dessert and pipe on the Cool Whip and top with the strawberry. You can slice the strawberry lengthwise, not cutting all the way through, and slide on the rim of the glass. Your guests will be impressed!! Let me know if you try my recipe. Thanks. E.

I have made fruit trifle layering white cake, frozen strawberries, cheesecake pudding, crushed vanilla wafers and topping it all off with whipped cream. I do not know if this is healthy enought for you but it is very delicious.

I don't know the nutritional information on it, but I do know that the new "Ready to Eat Cheesecake Filling" from Philadelphia Cream Cheese is great and easy! You can mix in whatever you want - fruit, cookies, etc. - simply spread it into the crust and you are good to go.

This is the absolutely best summer dessert... and its about the easiest thing I have ever made. Take 1 tub of cool whip, 1 package of pudding, and 1 can of crushed pineapple, and mix them all together. Serve over angel food cake. This stuff is just ridiculous it is so good! You can make it healthier by substituting sugar free cool whip, sugar free pudding, and no sugar added pineapple. I love to add other fruits as well, anything is great. My favorite is sliced strawberries and blueberries. Just be careful adding frozen berries to the mix because when they thaw they release a lot of liquid. I have also switched it up with using different flavored pudding, cheesecake or chocolate are great too! To make a larger batch, use one jumbo tub of cool whip and the bigger package of pudding. I don’t think it is possible to mess this recipe up!

Well, it seems some of the recipes you've received are simple but not so light in calories. This recipe may appeal to you. We get individual containers of Key Lime flavored yogurt (we like Yoplait Original and it is 99% fat free) and either put it in a glass dish with crushed graham crackers on the bottom or a few Teddy Grahams on top. A small swirl of whip cream on top (and the kids like a few colorful sprinkles) and you have a healthy, super fast dessert. It's great nutrition and satisfies the sweet tooth.

I don't suppose this is good to share at a pot luck since it is made in individual serving sizes... unless you wanted to make a bunch up in small plastic cups. We do this as a family during the summer for an icecream alternative. I'd be curious to find out if you could make it into a pie... you'd need something to make the yogurt stiff so it doesn't just slump over when you cut into it.

Buy some nice fresh banana's a packet of hershey's chocolate you can melt in a few secs in the microwave. Peel banana place a pop stick in end dip in choco and freeze , and you have a fresh banana pop . Its great , affordable, and easy to make with the kids
