here's an alternate lentil option. cook lentils and bulgur together. then stir with carmelized onions, and the olive oil you used to brown them with. eat with pickles, or with a salad with a zesty vinegary dressing.
Hi moms, I have some lentils in a tomato curry sauce that I am going to heat up for dinner tonight. I want to have something yummy with it. Usually we have brown rice with lentils. So bored with that! Here are the options I have in the house, I am so not going shopping right now!
1. Orzo
2. Brown rice (sick of this one)
3. Polenta
4. Bulger wheat
5. Pasta either elbow/linguini or angel hair
6. potatoes
7. Ciabatta bread
Any delicious suggestions for a good tasting and healthy side to go with the lentils from those options? Thank you so much moms!
Thanks so much ladies! I am making the bulgur with the lentils. I'm going to cook the bulgur with sauteed onions and just add a little salt and pepper.
The lentil recipe I used is from allrecipes.com. I've made lentils a lot of ways, here's this recipe:
Ingredients
1 cup dry lentils
2 cups water
10 ounces stewed tomatoes
1/4 cup chopped onion
4 stalks celery, chopped, with leaves
1/2 teaspoon curry powder
6 cloves garlic, minced
salt to taste
ground black pepper to taste
Directions
1. Combine lentils and water, bring to a boil.
2. Lower heat to simmer, add tomatoes, onion, and celery. Cover and let simmer 45 minutes. Check every 15 minutes to stir, and add water if necessary. Add spices last 15 minutes to taste. Taste and re-spice if necessary before serving.
Serves 4.

I would go with polenta and a salad!
Those lentils and red curry sauce would be GREAT over Bulghur!! Yummy. I want to eat at your house tonight :)
Yum! I love making lentils. They can be filling too. How about toasted ciabatta with a salad or some greens? Can I come to your house for dinner? :)

I would go with the pasta or ciabatta bread, major carb lover here. Do you have any fresh salad too? That would make a yummy meal.
ps, How do you make lentils? They sound so good, but I am clueless.
