My kids loved a slice of meat and cheese rolled up. As far as the veggies, my middle son did not willingly eat veggies unless they were raw. When I made roast with potatoes, carrots and celery, I would mash up the potatoes and carrots together. He loved it that way and always asked me to make him more potatoes the same way. I did a lot of hiding veggis in spaghetti sauce, potatoes etc... Good Luck!

Would he go for a turkey sandwich? What about meat balls? We do not consume any canned or frozen food at home so my lunches are cooked by me. You could also throw in some cheese cubes, a yogurt, even nuts if he likes them. I even throw in some bite size oreos once in a while. The fruit part is easy because you can pack little containers of fruit such as grapes, pineapple, apples, bananas, etc. The easiest thing is to cook and pack every 3 days or so. Also you can make some cheese quesadillas. Just warm up a flour tortilla and add some shredded mozarella cheese. My daughter loves them. I also make chicken soup with veggies. She will not eat the veggies but she drinks the broth which I believe has nutrients as well. I mix the broth with rice and chicken and squirt some lime juice. I make the soup once a week and it lasts the whole week.

Anything wrapped in a tortilla is always fun and easy. Also anything that can be dipped is good- just try to go for more healthy dipping options- something other than ketsup. As for the veggies- don't stop offering them just because he's not eating them. Don't even aknowledge that he doesn't like them and be sure you are eating them in front of him. What about cherry tomatoes- my son loves them because they make a squirt of juice everyime you bite into one!

My 2.5 year old is a VERY picky eater! Not so much veggies in his diet unless I can sneak them in! But like someone else has mentioned he loves to dip foods! He does great with grilled cheese and tomato soup, peanut butter and jelly stars (won't eat a regular sandwich yet- I have to use a mini star cookie cutter! lol) and likes to dip it in yogurt. Spaghetti and garlic toast. He does however LOVE salads! Weird I know, but as long as it's romaine lettuce and ranch dressing he'll eat the entire plate!
We do chicken nuggets and french fries once a week too. We don't eat out often so I don't think it's too bad for him! Also try Campbell chicken noodle soups! They have small bits of cooked carrots that he may not notice in there! My son loves the shaped pasta in it!
Good luck!

Nothing is easier than boar's head roast turkey- get it sliced a little thicker so you can cute it in nice little pieces. Pick a fruit of the day and peel and cut it up. What more does he need? Try him on blanched broccoli with dipping sauce, or blanched fresh gr beans.

What about cheese and crackers? Also when my boys where that age they were picky as well and would not eat alot of stuff but I was tricky and got them to eat tuna fish cause I used to sit down and eat tuna fish on crackers so they wanted what I was having! I also tricked them with peanut butter and raisins on little pieces of celery. They also liked Macaroni and Cheese with either hot dogs or meatballs that I made in it!. I could go on but I wont lol....Good Luck
