Easy but Fancy Dessert

I was planning to make mini cheesecakes, tiny mini pies etc for a fancy 60th anniversary party but now realize that would mean me making 150 individual tiny desserts. Any ideas for some thing I could make, cut into small sizes and serve that would be EASY and look fabulous!

If you like cheesecake, why don't you make large ones in 9x13 pans, cut into small squares and then top each with a scoop of fruit pie filling - cherry, blueberry, strawberry, apricot. Pretty, colorful, gives some variety. You could also use chocolate sauce, raspberry sauce, whipped cream....

Google tuxedo strawberries. It is sooooo easy once you get over the first one. They look hard but take a few minutes to do. They look like you worked for hours.

I don't know if these are sold in your area, but I found these at a store near me and served them as one of our Easter brunch desserts with fruit on top. They are small 2-bite cheesecakes, and the box I found held 32 for $4.99:

They are in a plastic tray that protects them, I just had to thaw them for 20 minutes, dolloped some fruit on top and served them, they were superb!!

This is something SUPER EASY I did for a social event, it's just assembling and looks (and tastes) great:

Pineapple short cakes

You'll need:clear plastic champagne cups (not flutes), canned pineapple (sliced and with juice), pound cake. whipped cream, cherries.

Place on the bottom of each cup a round of pound cake (cut circles out of a slice with a large round cutter). Wet the pound cake with the juice of the pineapple (make sure each slice gets enough juice) and cover with whip cream (I like the spray kind). Place the slice of pineapple on top of the whipped cream and a cherry in the hole of the pineapple slice. Freeze before serving.

Wrap brie cheese and apricot jelly with filo dough. Bake to a golden color.

Strawberry short cake. Bring strawberries with a bit of sugar to a syrup texture in a pan. Spoon them into a sheet of shortcakes and add a dab of whipped cream.

Maybe something with store bought filo dough? That way you could make a big pan and cute diamond-shaped pieces.

I'm not sure what the easiest filling might be. Buy a bag of crushed pecans, drizzle 'em with honey and sugar, layer it onto the dough, and pretend it's baklava?

Perhaps you could pipe the cheese filling into purchased FILO pastry shells before baking? Dust them with cocoa powder after baking. Then add a gold or silver edible foil on top.

Ooooo! I just read GrammaRocks' answer and I like it. For $25 you have your cheesecakes. For a few dollars more, they are flavored and decorated with assorted canned fruit fillings or the cocoa dust. The edible foils would be fussy, but fancy. It is your time and money to spend.

How long do you have...how many people would help? You can purchase mini pie (graham cracker crusts), which are great and taste good..all you do is fill them the night/day before and refridgerate.

I dont know when you need it by...I just now saw this post. I also dont know how much you want to spend. You can buy premade poundcake, some clear plastic shot glasses or cups, not big ones. Make layers using poundcake and strawberries then on the top add a little bit of whipped cream. You can also do it with any type of filling (fruit, pudding, custard)
For ideas just google image layered dessert in a glass.

I use the jello no bake and my pampered chef mini tart pan, they make bite size cheesecakes very easy to do, only thing is do you have one (pampered chef tart pan) or can you find one at like Target or wal mart...I also have the little wooden thing to push down the crust to fit the filling and if I reallt feel fancy I put it in the little dessert gun and fill the cups like it is icing makes it look pretty...

If you rethink the mini-cheesecakes, I just made 4 dz for Bunko yesterday and it didn't take long at all.
You'd have to triple the recipe below (or make 3 times) but the most important thing is the 2" foil cups:

I don't think there is anything easy about 150 individual desserts. recruit some help for sure.
cake balls. They are not overly easy, but they freeze okay so you can make them up ahead of time.
