The cherry tomatoes are the ones you should use, and I have also used canned chunk pineapple, in addition to others already mentioned.
I know how to put Shish Kabobs together, but am stuck on my vegetable selection.
Some of my husbands family do not eat meat (we all do!) so I'm trying to think what I can add to the Kabobs without the vegetables falling off as there is no meat to hold them together.
Any ideas would be much appreciated!

Here is what I generally use for my shish kabobs (not all at once):
Cherry or grape tomatoes, squash, pineapple, green/yellow/red bell peppers, snap peas, pearl onion, olives (black or green depending what marinade you use), mushrooms, corn on the cob (sliced to make a ring shape about 1/4 - 1/2 inch thick)
Have fun mixin' and matchin' your kabobs for each person.

Typical things like squash, zucchini, mushrooms and onions are always good. To make it more interesting, think outside the box like cutting corn on the cob or sweet potatoes into circles, jumbo asparagus and even things like blanched cauliflower or broccoli are delicious if cooked over a low grill flame. good luck!
When I make kabobs for my vegetables I use peppers, onions, mushrooms, zucchini and squash. I've also used fresh pineapple on them and that's good too! Your question made me hungry!
little new potatoes are good grilled too....they take longer to grill if they are not pre cooked. Sometimes you can find them in the canned veggie row at the grocery store. Mushrooms, red/green/yellow pepper, pineapple (yum), zuccinni, squash-yellow, vidalia onions (yum)! Also kabobs are good served with rice as a side dish.

We always use red bell peppers, green bell peppers, potatoes, carrots and onions. Good luck!
Shish Kabobs are fun! You might try some of the vegetables whole without cutting them up. An example is new potatoes; pearl onions; mushrooms; green onions or cherry tomatoes. Those veggies that you need to cut, just do not cut them as small or thin. An example would be red, yellow or green bell peppers; zucchini; corn on the cob; red, yellow or white onions; or maybe some flourets from broccoli and cauliflower.
A good marinade for meat and veggies is a bottle of Italian Dressing. Marinade over night turning the kabobs every couple of hours. Yummy!!
Don't forget the fruit kabobs!! Try some strawberries; pineapple; peaches; plums and apples. Be sure to marinade these items overnight as well. Check with FoodNetwork.com for some great recipes.
