Okay people!! You've always had something good for me in the past....so here it is....I have chicken that I defrosted for dinner. I also have pineapple that needs to be used...I'd LIKE to put it over rice and NOT have to run to the store for anything...

I have onions and potatoes...but NOT green onions...

sssssoooo my amazing Mama's and Papa's on here...what is a recipe you would use for chicken and pineapple?

ooh my!! keep them coming!!!! my mouth is watering!!!

my family is having a hard time deciding!!!! I love the Hawaiian BBQ chicken - will DEFINITELY save that for another time as I don't have 6 to 8 hours in the slow cooker - but YUM!!!

I love this site!!! You guys are the bomb!!!

JUst dip chicken in soy sauce, brown sugar, garlic and grill in pan or on BBQ grill. When finished do the same to the pineapple and serve over rice cooked in chicken broth if possible and add some crushed nuts if possible. You can also grill onions cut in circles and grilled with chicken if you want.

I don't know what cut of chicken you have or if the pineapple is fresh. However, I instantly thought of grilled skewers with rice. Chunks of chicken (marinated in soy sauce, oil (sesame, olive, veggie...), spices/hot sauce, pineapple juice...whatever makes you happy) with chunks of onion and pineapple on skewers. I keep coconut milk on hand for making coconut rice but plain rice would acceptable in my opinion. I am not sure what to tell you to do with the potatoes since I can't think how they'd work with the skewers. I think thinly sliced and fried would be ok if you felt compelled to have potatoes. Yep - use the teriaki or soy w/ the pineapple for a sauce/glaze to put over rice. If you also want to use the potatoes, I often slice the potatoes, chop the onion then layer in a bowl w/ butter salt and pepper and cover and microwave 5 minutes - stir and 3 more (or however many until soft).

I'm a big fan of simple meals that let the true taste of the ingredients shine. If the pineapple is fresh, I'd save that for dessert - there's nothing better than sweet pineapple after dinner (it's even great for digestion!). Caramelize those onions in a bit of butter, cut the potatoes into chunks and roast them with a bit of olive oil, salt, pepper and whatever other herbs and spices you like. Marinate the chicken in lemon juice, olive oil, and crushed garlic for an hour or so, then pan sear them. Salt and pepper on everything. Serve with the caramelized onions and roasted potatoes, maybe a salad if you have it. Followed by fresh, sweet pineapple for dessert. Simple, healthy and delicious. YUM!

I like Tracy's idea. Also, if you have BBQ sauce and don't mind not putting it over rice, I have a tasty recipe. I'll just give you the link to where I got it. I have made it by popping it in the stove, or the slow cooker. Also, I've used fresh pineapple with juices, and it was great. (Don't know if yours in canned, or not!)

You can slice the potentates thin and make chips, or dice them and oven roast, or pan fry them. (Haha...I have NO idea how I typed "potentates." Definitely meant potatoes.)

I would make chicken terryaki. You can use soy sauce and pineapple juice to make a homemade terryaki sauce. Perfect over rice.

a little late but here goes, cut up the chicken, add your spices, terriyaki sauce, then add sliced pineapple, so you get grilled terriyaki pineapple chicken. more later, playing with toddler

Go to Bettycrocker.com and click on recipes. On the right side you can type in chicken, pineapple and onions and recipes with those ingredients will pop up.
