I was making chocolate chip cookies this AM with my boys...hopefully before it got too much hotter...yeah right (it's already 91 degrees with 60% humidity)...any way - I left to take care of laundry and my boys proceeded with the recipe....
They used CONFECTIONERS sugar instead of cane sugar - didn't freak - went ahead and proceeded....did you this?!?!?! It's STILL GOOD!!! I think I like them better....

yes, when i use yogurt instead of eggs in a baked goods recipe, or when i sub light brown sugar for white in the same.
it turns out tasting so much cleaner and wholesome.
I used to make cookies with bread flour too, it made them so fluffy. And the other day i made carrot muffins and realized i didnt have raisins OR nuts....lol so the batter is sitting there naked and i throw in a tub of fresh blueberries. Everybody loved it!
btw,,,thought id add, these replacements that you can use
1 egg~~~1 tbsp yogurt,1 tbsp mayo, 1tbsp flax meal, 1tbsp cornstarch and water
1 tbsp cornstarch~~~2 tbsp flour
1 tbsp powdered sugar~~~ sugar and cornstarch
oil~~~equal amounts applesauce
cream of tarter~~~lemon juice
baking powder~~ equal amounts baking soda and cream of tarter
mayo~~~~pureed cottage cheese
buttermilk~~~milk with lemon
Love it. I'm not very good at following recipes so I like happy accidents.
I always thought confectioners sugar just really finely ground up cane sugar. Is it not? If not, I've been making a WHOLE lot of stuff with confectioners sugar and good thing it's somewhat interchangeable! I just like the consistency better. Like the baker's sugar. You don't have to deal with 'grit'.
EDIT: I just looked at the bag and it contains corn starch. Who knew? I can't believe I never looked before. I guess that's why it always bakes up a little thicker/poofier than normal cookies.
Now, I have to go make cookies.

I'm not sure if I've ever followed a recipe exactly, except for most of the ones my Grandmother handed down to me.
Most times, I don't even use a recipe at all. I just make it up. Even for baking! My kids swear I make the worlds best chocolate chip cookies, and nope, no recipe. Just do what I do. lol
I have a pretty firm understanding of ingredients and how to substitute, so I'm always changing this for that. And almost always happy with the results!
Usually when I mess up a recipe it does not turn out for the better. :(
That's awesome that the cookies still turned out good, or even better.
MissouriMK you are right - it's just ground up sugar with a little bit of cornstarch thrown in. During passover I make passover powdered sugar by grinding up sugar and pinch potato starch in the food processor. In some recipes the cornstarch could change the texture but in something as robust as a chocolate-chip cookie, one wouldn't notice the difference.
Cheryl now I want cookies LOL. I was out of baking soda a couple of weeks ago and used baking powder in my cookies and they came out fine. My biggest substitutions were that I wanted to make a chocolate cake but had no mix. So I made one from scratch and was also short on eggs (had 1, needed 3) and didn't have any white vinegar so I used rice wine vinegar instead. I found some internet substitute for the eggs and it came out OK. I was pretty relieved!
happens to me all the time... usually when making dinner and I realize oh I do not have that veggie or sauce and figure something else out.
Yep. I once was making sugar cookies or choc chip and added baking soda instead of baking powder. They came out puffy and cake like. Yum!
