Hi Moms! I would love a recipe for cucumber sandwiches. I recently had a catered lunch and they were serving these delicious cucumber sandwiches and I wanted to try to make them at home. I know that it had some sort of cream cheese with it. Does anyone have a recipe they would like to share? Thanks in advance!

I love them too.

The ones I had was cream cheese with fresh dill minced in it. Here are some variations. The one with the ranch dressing powder mixed in would be good, maybe with some fresh dill sprinkled on top of the cucumber.

There are a lot of fancy ways that add in other ingrediants, or shred the cucumber into the mix, but I feel like the simpler, the better.

When I make mine, I just use the rye square shaped bread, mix a pint of sour cream with a pkg of that powdered ranch dip, put that on the bread, add a slice of cucumber and sprinkle with either fresh dill or you can buy the dried kind on the spice aisle...

quick, easy and PERFECT for summer!!!

INGREDIENTS:
1/2 cup watercress
1/4 cup parsley leaves, chopped
1/4 cup butter, soft
4 oz cup cream cheese
2 tbs chives, chopped
PREPARATION:
Chop the watercress and parsley together until fine. Blend herbs with butter, cream cheese and chives. Spread on bread, and make into sandwiches. Remove crusts and slice diagonally into quarters

Hi, I used to make these for showers, etc. A caterer gave me the recipe, but I can't find the exact measurements. However it used one package of cream cheese and either half or whole package of hidden valley ranch powdered mix. Beat softened cream cheese and mix together. Spread on on side of sliced mini bagels or cocktail bread add 1-2 cucumber slices and top with another slice of bagel or bread. Very easy and always a huge hit! Good luck.
