Chocolate Cake Recipe?

Hi there,

My daughter is turning 2 this week (already!). She has requested a chocolate cake. She tasted a rich, sweet cake this summer at her grandfather's birthday. I was hoping to find a recipe that is somewhat healthy for the little kids, but also tasty for the adults. Not sure if that actually exists! Please let me know if you have any recipes to share. I've found some online, but you never know how tasty it's going to be until it's too late. :)

I do not have it with me but it is probably available online, how about Chocolate zucchini cake? It is light and chocolately but has a lot of veggie in it!! smart little girl to ask for chocolate!

Hi H., I found this cake recipie on line. I made it for my nephews birthday, and now I have to make it all the time. It was really good, however it is not healthy. If you have a fax, contact me and I can fax it to you. I also have the matching chocolate frosting. The cake is called Hershey's "Perfectly Chocolate" chocolate cake. I got it from hersheys.com/recipies.

My daughter hasn't been getting any sweets yet, so this is what I made for her birthday a few weeks ago. The kids gobbled it up, and the adults nodded appreciatively

I used Russian cottage cheese (tvorog) and added frozen blueberries. Spread a little extra-thick sour cream on top, sprinkled a 2 out of crushed Joe's Os cerea, and put fresh blueberries around the circumference. If I had to feed more than 12 kids, I'd bake 2 or 3 of these and layer them, and if my kid was already exposed to sugar, maybe use fudge or somesuch between layers. Hope this helps!

Not sure how healthy it is, but the best chocolate cake I have ever had is the Hershey's Best Ever Chocolate Cake - cake and frosting (you have to do the frosting, too, or it just isn't as good!). The recipe is on the back of the can of Hershey's unsweetened cocoa powder. YUMMMMMMMM!

If you want an extremely easy and fast recipe, go online and google "absurdly easy vegan chocolate cake". This recipe is so delish and quick and easy, you'll be blown away. PLUS it makes two rounds, so it's perfect for a layer cake. It's vegan, no butter, no eggs. Just don't over-stir or it might get rubbery (as with any home-made oil-based cake). Enjoy!

I have a FABULOUS whole wheat chocolate zucchini cake recipie from King Arthur Flour Company's Whole Grain Baking cook book. If you're interested let me know and I can post it while kids are napping. I highly sugguest this awesome cook book!!!!

2 1/2 cups whole wheat flour
1/2 cup cocoa powder
1 t baking soda
1 t paking powder
1/2 t salt
1 cup brown sugar
1/2 cup white sugar
1/2 cup softened butter or oil
1/2 cup buttermilk
3 eggs
1 t vanilla
2 cups (1 pound) grated zucchini
1 cup chocolate chips if desired

Pre heat oven to 350
Whisk together the flour, cocoa, baking soda, baking poweder, and salt in medium bowl. In large bowl stir together sugers and butter (or oil) untill smooth, then add buttermilk, eggs, and vanilla and zucchini (and chocolate chips if using) . mix well. add half of dry ingredients to wet and mix, then add remaining.
pour into greased 9 x 13 pan and bake for 45 to 50 minutes, or untill top springs back lightly or instered knife comes out clean. let cool.

this cake is so hearty you can eat if for dinner!! your guests will never know it's whole wheat or zuchinni!!

Also, I saw the whole wheat choc zucchini cake recipe in one of the other posts, and I am excited to try that one too. I've made zucchini choc cake for years with white flour and it has always been a huge hit. Happy to know there is a whole wheat version now!

I'm not sure about the "somewhat healthy" part, but the best and most rich chocolate cakes I have ever had were one that had beer & sauerkraut in the ingredients ( I was surprised!), and another one called "texas brownies" which is not really like brownies but more of a single layer cake in a big pan with a rich frosting.
Try looking on the internet for recipes. Maybe the online site for Cooking Light Magazine? They have good recipes, and that might help meet your requirement of being a bit healthier.

I found out I am diabetic when I got pregnant with my first child, so of course when birthdays roll around I want him to have a delicious treat that I can share, too!

eh, I guess you'll have to copy and paste that. I've used this recipe for several birthdays and we all loved it. I'm the only diabetic at my kid's birthday parties, but everyone else enjoyed it, too, even adults! Diabetic recipes often have an emphasis on health, so it may be worth a try.

Tips: Try to eat it up. I can eat small portions of sweets so they tend to hang around a while and the cupcakes I made from this recipe got rock hard after a week.

I didn't blend up the fructose.If you don't, it just makes the finished product look more glittery.

It's important to have stiff egg whites to beat into the batter to make the cake light and fluffy. If the egg whites are watery instead of fluffy, the cake will be dense.

I know you requested a healthier choco cake...but I say hey, its a birthday and not something you are gonna eat everyday...so I will offer my FAVORITE chocolate cake in the world anyway...its called Mayonase Choco Cake....you can find the recipe on-line I am sure. If you've never had it you will try it and LOVE it too, going back to boxed choco cake is not an option for my family anymore. You use mayo instead of egg and oil in this recipe. It has like 6 ingredients and is SOOO easy, a sure hit, good luck!

Martha Stewart online has a recipe for everything under the sun if you want to make a cake from scratch. Otherwise get a Duncan Heinz cake mix with pudding - it's yummy and dummy-proof and then make your own cream cheese frosting instead of the store bought stuff that's full of partially hydrogenated vegetable oil and preservatives.
Hey a girl only turns 2 once! Party Hearty!
She may turn 29 several times later on....;)

you might want to check out weelicious.com for recipes. I haven't tried any of their recipes. However, it's geared towards babies so their recipes are healthy yet, fun and tasty. good luck!!! and..happy 2nd birthday to your daughter.

I like the baked goods (including the chocolate cake that has pumpkin) in Jessica Seinfeld's cookbook. They don't seem overly sweet like a lot of other cakes, muffins, etc. plus they have veggies and are moist.

Now what is the point of a healthy birthday cake:-) Most 'healthy' cake recipies just use chemical substitutes anyway which sometimes makes you wonder what 'healthy' really means. I still think Costco has some of the best cakes/cupcakes for birthdays for the price.

replace oil with apple sauce or prune puree

For sugar replacement,I think there are two natural sugars that are worthy of a healthy diet.

One is Stevia, which is much sweeter than sugar, but could only be used in small quantities and sometimes doesn't give satisfying results in dessert recipies.

The other is Xylitol, A 5 carbon sugar from the bark of birch trees. It is a natural sugar , not a man made fake.It is measured cup for cup like sugar but 40% less calories.It is metabolized as a normal carb but at a much slower rate than sugar. This sugar doesn't have an aftertaste, has a very low glycemic index, making it useful for diabetics. It feels and tastes like sugar, and doesn't cause any tooth decay or promote foul bowel flora/yeast infections because bacterias and yeasts can't metabolize it. You can use granulated Xylitol in any recipie that calls for sugar, except in yeast breads that need to rise and a recipie that needs the sugar to brown or carmelize (it will do neither).

Try to look for a cake recipie that uses whole wheat PASTRY flour instead of all purpose white flour.

Chocolate cake('Sweeten Your Life the Xylitol Way' cookbook)
-----------------------------------------------------------
Combine in large bowl:
2 C spelt flour or whole wheat pastry flour
1 3/4 C xylitol
2 tea. Baking soda

In sauce pan , combine these ingredients and bring to boil, then romove from heat:
4 T unsalted butter
1 C (minus 2 Tbs) water
1/4 C unsweetened cocoa powder

Stir in:
6 T prune puree
and pour the mixture over the dry ingredients.
stir in:
1/2 C plain lowfat yogurt
2 lge eggs
1 tea. vanilla

Pour batter into buttered 9 x 13pan, bake 350 deg for 20-25 mins.

Frosting:
---------
(yield 1.5 cups - may have to double it depending on if sides of cake are frosted or not)

Break into small peices and melt in micro in good size plastic bowl, (stirring very often so it doesn't burn):

3 oz unsweetened chocolate bar

Stir in:
1/2 C whipping cream
3/4 C xylitol
3/4 C reduced fat sour cream

This can be used as a warm ganache glaze, or as a filling between cakes once it is cool, or as a rich and creamy frosting if it is whipped after cooling.

I hope this isn't a repeat, I don't have time to read all the replies. Here is a great recipe!

One box of chocolate cake mix
One diet dark soda (diet coke or diet dr pepper)
(Yup, that's it,,,no other ingredients)

Pour diet soda into cake mix and stir it up. Pour into 13"x9" pan sprayed with Pam and cook as says on box. You will get a super yummy moist cake.

I put fat free cool whip on top and then put sliced strawberries or blueberries or whatever fruit you like on top. It's delish!!!

Two people below suggested chocolate zucchini cake. I know it sounds awful (I hate zucchini) but it is the best way of getting rid of that unwanted zucchini.
