I've asked cooking questions before and you've all been so helpful!! Here's the new dilemma! I want to make some beef chili in the slow cooker. I can't, for the life of me find a recipe our family would like. We don't like beans or bell peppers. I have found some without, but they call for beer. Do any of you have a fairly easy chili recipe with no beans, bell peppers, or beer? Thanks a lot!!

So What Happened?

Thanks everyone, for the great advice! I found a packet of chili seasoning with no salt, at the store! We're going to use that, with a few of the ingredients/tips you added.

I have a super simple, 15 minute chili recipe. And people LOVE it. I use 2 pounds ground meat, brown with chopped onions, drain, add 2 pkgs of chili mix (I use the great value brand from Walmart), 3 can's tomatoe sauce, 1 can of rotel (you can leave that out and sub another can of tomatoes), i can of any type of chopped, stewed, chili, crushed, etc., tomatoes. Stir all that together and add water till you get it to the thickness you want. It takes about 15 minutes to make and I let it simmer for however long I want, so you could brown the meat and onions then dump it all in the crock pot and leave it there. I know you said you don't like beans, but this is super yummy with RANCH STYLE beans. I add 2 cans. Good luck and enjoy all the posted ideas!

From my mothers cookbook..
To cook this in a crock pot, you will still need to brown and drain the meat or it will be to greasy... Then place all of the ingredients in the slow cooker on low for 5 hours.

Chili Con Carne
1 lbs beef chuck chopped coarsely( a mixture of meats can be used)
1 cup white onion, chopped
1 large clove garlic crushed
2 tomatoes, chopped
1 tsp ground cumin
1 tsp oregano, dried
¼ teaspoon freshly ground black pepper
2 tablespoon chili powder
1 teaspoon salt
2 cups cooked Pinto or black beans (optional)
in Texas we do not add beans to our chili.

To control the heat
Medium heat use ¼ tsp cayenne pepper
Spicy hot ½ tsp Cayenne Pepper
Super hot 1 tsp Cayenne Pepper

Option 2
Medium heat whole Jalapeno seeded (remove seeds) chopped
Spicy hot 1 whole Jalapeno with seeds , chopped
Super hot 2 whole Jalapenos with seeds, chopped.

In a large saucepan with lid, brown the meat with the garlic and onion. Then add all of the spices continue to brown for a few more minutes. Drain all of the fat. Add tomatoes and enough water to cover the meat mixture. Simmer for 1 hour. Add beans and cook for 5 minutes.

Other meats that can be used with the beef.. Ground Turkey, Venison, or Pork.

Get the 2 Alarm Chili package at the grocery store. All you have to add is your meat, and tomato sauce. I add onions, bell peppers and canned tomatoes also. You can't go wrong with this pack because all the seasonings needed for chili are in it, but they are all separate so you can put as much or as little seasoning as you like. You can also control the heat. I serve the kids then add the cayenne. Make sure you have cheese, chopped onions and saltines...YUMMY!

You could probably just make it with the beef, tomato sauce, diced tomatoes, and chili spices. You can find chili spice kits at the grocery store with everything you need and just throw it all together in a slow-cooker. Or if you have a recipe that calls for beans and/or bell peppers, just leave them out and add more meat. It's too bad that they don't like the beans and peppers though - they are so healthy and good for you!

Sure do! It's a sweet chili, and my boys (5 and 6) love it!

2 lbs of lean ground meat, browned
1 chopped onion
2 stalks chopped celery
16 ounces beef broth
12 ounces tomato paste
1/4 cup brown sugar
1/4 cup worchestershire sauce
3 squares of baking chocolate, chopped
2 tbs of the following:
onion powder
garlic powder
sweet paprika
spicy paprika
cumin
corriander
cinnamon

Combine in crockpot and cook on high for 6-8 hours. We like to serve it over spaghetti.

This is simple and been in our family for generations.
1-2 pounds ground turkey or beef
1 large can tomato juice (32 0z. or more)
1 large can chopped tomatoes
1 pkg. William's Chili seasoning
Cook meat, drain well. Add the rest and hest and serve. You can add in can Ranch Style Beans. I put onion sometimes.

I use beef broth (Swanson, the one with lower sodium) instead of beer because my husband doesn't like the taste of the beer in it. It's really tasty. You can use chili seasoning packs from the grocery store, but I usually don't because they have too much salt. I use minced garlic, chili powder, ground cumin, oregano, onion powder (I use onions too, so it's to taste), salt and pepper (and sometimes a touch of freshly ground nutmeg... I know... I'm weird, but it's good). You really don't need a recipe without beans. Just leave them out of any recipe you find, lower the seasonings slightly, and expect it to make less food. We also put canned diced tomatoes in ours. One can per pound of beef. I usually thicken mine at the end with flour or cornstarch, but you don't have to. Just experiment with the ingredients, do a few taste tests, and then leave it to simmer on low in the slow cooker. You'll do just fine!

I just realized that my "recipe" may have been a little confusing, lol. So... I'll try and sum it up a little bit.

1 lb ground beef
1 can diced tomatoes
1 can (approx 15 oz) beef broth
1/2 of a large onion, diced
Seasonings to taste: minced garlic (or garlic powder if you're desperate), chili powder, ground cumin, oregano, onion powder, salt, pepper

Brown the meat, then move the meat to the slow cooker. I'd also cook the onion in the meat drippings, but you don't have to. Then put everything into the slow cooker and turn it on. You can choose to thicken it at the end with a slurry of flour and water (you'll have to cook it a while longer to get rid of that raw flour taste... blech!) or cornstarch and water (my preference... it's fast), but if you like it thin, then leave it be.

Of course you can easily double, triple, etc. the recipe. Easy! Good luck!

We use Wick Fowler's chili mix, but we don't use as much chili powder as they provide, and we don't use the cayenne pepper. I think they have one now called "False Alarm" chili. That's what we like. It's spicy enough, but doesn't burn the mouth. You have to play with the ingredients to find the exact taste your family likes. I also use stew meat and not ground meat, and I do use the crock pot.

You can do it with ground beef, and one of the chili seasoning packets from the store, and just ommit the beans.

I make a chili with cubed beef, I like london broil the best, but round steak will work too. You brown it, add a couple of chopped onions, two or three cans of chopped green chilis, as many fresh crushed garlic cloves as you like, a can or two of crushed tomatoes,a rounded teaspoon (or more) of red chili powder, salt and peper to taste. You can cook this on low, covered, for a couple of hours, or put it in the crock pot all day. It is very good!

There's a lot of leeway on chili. Some are more like a meaty spaghetti sauce, and others can be a bit sweet like Sloppy Joe's. I dropped bell peppers from my recipe years ago since they started giving me heart burn. It didn't really make a difference to the overall taste of the chili. I've never used beer.
I use an old Consumer Reports recipe for chili. You can leave out the beans and peppers and it still comes out fine.

My old printed version doesn't have any corn in it, and I add a table spoon or two corn flour toward the end so it thickens up a bit. The longer it cooks, the better the flavors blend together.

I would skip the crock pot and do it on the stove them meat turns out a bit mushy. I use rachel rays chili recipe and you can sub more beef broth for beer.

you can substitute chicken broth for the beer... that's what I do and it works out fine for us!

Go to the next chili cookoff in your town, and snag a recipe. There are a lot of great ones out there without beans and bells. Unfortunately my reciped calls for both.
