This is a tried and truly good cheese ball, even people that do not like Feta, have told me they loved it and wanted the recipe.

For a holiday event for one of my clients (70 people) we tripled this recipe. It was almost all gone.. the event only lasted an hour.

I am currently in a Pastoral Studies program, and an older nun brought what she calls ”Jesabelle” to a gathering. She said that you make the cream cheese into whatever shape you'd like (I'm lazy and either leave it as a block or just make a log). Then, you combine a jar of apple jelly and a jar of pineapple jelly (usually available at specialty or international foods stores) in a pot and melt them together on low heat, adding a teaspoon of dry mustard and a half-jar of horseradish. It sounds strange, and I haven't tried making it yet, but it tasted really good! (and was a bit addictive)

Good luck!

This isn't really a cheese ball, per se, but more of a Spinach Ball (hence the name) with lots of cheese in it. And they are so friggin good my mouth is watering. I make them and freeze without cooking. Then I pop them in the oven when the guests show up on Christmas day! Delish. Plus, the kids love 'em!

Lindrusso's Spinach Balls
30 min | 15 min prep
SERVES 8
• 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
• 2 cups crushed herb stuffing mix
• 1 cup grated parmesan cheese, firmly packed
• 1/2 cup butter, melted
• 4 scallions, chopped
• 3 eggs
• 1 dash nutmeg
1. Combine all ingredients in a large bowl.
2. Shape into 1-inch balls.
3. Cover and refrigerate or freeze until ready to bake.
4. Arrange spinach balls on an ungreased cookie sheet.
5. Bake 10 to 15 minutes at 350 until lightly browned.
6. Serve with your favorite mustard or honey mustard for dipping.

Freezes very well

My favorite is a cream cheese recipe. It always goes very fast and it's easy and fairly inexpensive.

Soften 1 or 2 packages of cream cheese.
Chop the greens of a green onion.
Chop 2 packages of chipped beef.

Mix together, form into a ball, or whatever shape you want it in. Goes great with crackers.
