Can You Freeze a Roast & What to Do with Leftovers?

I made a great garlic/rosemary roast... but it is too big for just my hubby and I. I want to freeze the slices and use it later. Of course, I don't know if roasts freeze okay or not. Does anyone know if it is good thawed, and does anyone have any variations they would do with the slices?

My grandmother never wasted a thing! At some point the left-over roast became hash by adding the gravy or beef broth and thickener if you like along with potatos peeled and cubed. That was it for her, but I might add variations like mushrooms and celery or carrots...hummmm...then there is good ol' beef stew I suppose.
You can serve up the hash on toast for another filling meal or over something inventive or just like soup! Yes, you can freeze it too.

It should be fine defrosted and warmed in the microwave if you use it within 6 months and store it in a freezer ziploc bag.

It might be a little more dry.

Next time, freeze half the roast before you cook it. Then you'll have a meal ready to go! Just season it and toss it in a freezer bag, write the date and what it is in Sharpie and you're ready to go!

I have 3 kids and a job, one of two Sunday's a month, I double up on a recipe and make one to eat that week and one to freeze. I cook a bunch of chicken by boiling it in water, cooling it, then shred it for soft taco meat, casseroles, or soup. Same with ground beef... I cook meatballs, taco meat, casseroles, and I make some patties and leave them raw and freeze them so burgers are ready to go when I am.

You may not need the time or money savers now, but it'a great habit.

Yes, I have frozen cooked roast before and it was fine. When I freeze meats, I either use a container for freezing or I will wrap it in one layer of wax paper and then one layer of foil wrap. This seems to keep it fresh.

What we do with leftover roast is put K.C. Masterpiece barbeque sauce on it. Sometimes I'll chop it up and make chopped beef/pork sandwiches. Its really yum! I don't know if the garlic and rosemary would mix well with bbq, but I think it would be fine.
