I have a box of Betty Crocker Super Moist Carrot Cake Mix (15.25 oz) and a can of crushed pineapple (20 oz can). I would like to add the pineapple to the cake mix but don't know how much pineapple to add as it's a large can. I'm assuming I probably wouldn't add in the whole can? I'm also wondering if I would still add in the water, oil, and eggs called for on the box instructions?

I plan to make a homemade cream cheese frosting (haven't found an actual recipe yet) and am wondering if the cake would need to be refrigerated once I add the frosting to the cake due to the cream cheese?

Any guidance would be appreciated :)

That's a recipe using a cake mix and adding pineapple.

As far as the cream cheese frosting goes, it's ok to leave it out for a few hours, but after that, I would cover it and refrigerate it. (this is what i do with my cupcakes that contain cream cheese frosting.

I usually see the recipe on the box but here it is:

You'll notice it doesn't just call for pineapple, though, so I don't know what results you'd get. But made according to the recipe it's superb :) And anything with a dairy product needs to be refrigerated for safety, so if you serve it right after frosting it you're fine and can then refrigerated the leftovers, otherwise refrigerated until serving time.

I know I make a cake using box mix and adding either bananas or pumpkin. It uses one cup of the fruit, and I would drain the pineapple. I also use 1/2 cup water (you could sub the drained pineapple juice!) 1/2 cup oil, and 4 eggs. I think the extra eggs helps keep it 'sturdy' with the extra fruit.

For frosting, I usually just do cream cheese and powdered sugar to taste, that's it. I never add butter- just adds fat. But then, yes, I keep it in the fridge. Good luck, sounds yummy!

I think you have had some good suggestions. I would check the Betty Crocker 800 number (because you may get a live person), or her website.

For me: I just want to come over for cake...sounds wonderful!
