Anyone Make a Great Mole Sauce?

So, I've tried so many different kinds...from about six different women, and of course, store bought (which is terrible.) I like them all fine, but ONE lady makes the BEST mole I have ever had in my entire life. I could honestly eating this stuff (with chicken and rice) every day.

She showed me how to make it, and I was very observant...and I've tried to replicate it six times, and it's just not the same!! It is so frustrating! I don't know if it's just a ratio thing, or the fact that I am using a different cut of chicken in making the broth, or what. I bought some chicken legs, and I'm giving it another go tomorrow, so wish me luck!

Anyhow, just wondering if any of you mamas make a terrific mole, and how you make it?

So What Happened?

I'm so frustrated because I try, I sample, I add, etc...and it seems like there is just something I'm missing. I've asked, and apparently I'm using all the same ingredients...it just doesn't taste anything like hers!!

Jo...you crack me up. Stick him on here, and I promise I'll read his whole answer!! ;) Would certainly take his recipe for mole if he's got one!!! :)

Okay, the recipe...gaujillo chilis, onion, garlic cloves, whole allspice, tomato...I dry roast them in a skillet, then run them through the blender with the water from boiled chicken. Return to large pan, add the Abuelita chocolate stuff, and cook down. It tastes good...but it's just not right!!! I know I am using the right ingredients, I just don't know what I'm doing wrong. Anything you can suggest based on that would be great!!

(I did run the recipe by my friend again...she says I have the ingredients and process right. I don't know what I'm doing wrong.)

You would have to ask Troy and this board scares him. :p That is his genera. He cooks like I do, you know what it is supposed to taste and you know what spices effect the flavor and you sample a lot.

Not sure if that will help you at all, probably not.

Still if I got him on here he would by typing all night and you would fall asleep reading it.

What if you posted your recipe and steps here and we analyzed it for you?

Six times is a bit of a long learning curve. I usually give myself about 3 times to get a complicated recipe correct. What about running your recipe by the original gal and ask for her input on what she thinks you need to correct?

MrsLa...I don't see any nuts (almonds, peanut butter, etc) in your ingredients.

I have a simpler one handed to me by my mom. I love it! You brown your chicken with some oil. Add minced garlic, about two cloves, a sprinkle of flour for a rue, followed by some chicken broth, enough to cover the chicken, add a heaping spoon of peanut butter, a crumbled toast or cracker crumbs, and red chilli powder to taste. Cook for about forty five minutes. Sorry that I don't have exact measurements, but I think great cooks are like this.

I remember the queer eye for the straight guy once had their straight guy make a mole. It had something like 42 ingredients. I bet you can look up the recipe.
