Sweet Potatoes--Cook Today for Monday

I'm making a sweet potato casserole for Christmas Eve. I was thinking about cooking the sweet potatoes today so that I can give some to my 10 month old twins for dinner. Would it be too early to cook all the sweet potatoes today? Give some to my boys that use the rest for Monday, or should I just wait and give my boys something else tonight? It would also make Sunday and Monday easier for me, if I could at least cook the potatoes today. I won't add any other ingredients, just cook them.

I'm a home economist and it's definitely OK to cook both the sweet potatoes and the potatoes today and refrigerate them. Leave them whole or in large pieces so that less is exposed to the air. I've done this several times myself.

I think its too early. If you really want potatoes for your LO's, just make a small potato dish tonight for them.

If you are in doubt that they will still be okay to eat for Monday take some out to feed the babies today and put the rest in the freezer. Take out of freezer Sunday morning and place in refrig to thaw and use Monday.

Personally I think they will be fine in the refrig until Monday.
