Wild Woman-I've done most of that and more in past years. I was hoping for something new. I have to say, I make mean home made skins. Last year I did bacon wrapped chicken bites that we're awesome. And the catered pasta-it the one think I'll cater in. Maybe a penne a la vodka. Just need some fresh ideas. My party is very food centered.
Love the Hawaiian pizza idea. Might make a couple and cut into bite sized pieces. Was thinking mini chicken parm bites (no roll). And love a pepperoni skewer for the kids. Will have to keep the adults away!!

I like to get those little parkerhouse rolls and defrost them. I can't remember if I tear them in half or not (it's been awhile since I made this, and I would know if I was doing it by looking), but you stick a couple of pieces of pepperoni (I cut the bagged pepperoni slices in half so they are small half moons), a bit of mozzarella cheese, and a half sprinkle of oregano into the middle, roll/pinch it closed, spread them out on a baking sheet and spread a touch of butter on the top. Bake.
They are wonderful. The family usually has them half eaten before I am finished with the 2nd pan.
Goodness there are so many.
Spinach and artichoke dip (I add some red pepper flakes to mine people seem to love it)
Potato skins - we do a variety some broccoli/cheese, some chili/cheese, some bacon/cheese so there is something for everyone
Chicken wings. There are so many different sauce you can get to put on them.
Mini chicken parm sandwiches - use frozen patties to take the easy route or fry your own if you have the time.
Pulled pork sandwiches - food network has a great recipe for pulled pork in a crock pot. Some good baked beans and homemade Mac and cheese to go with it and you have a whole meal!

Frito Pie Made with the small bags of Fritos, slice them open on the side of the bag. Place the chili on top, add shredded cheese , Raw onions. It it right out of the bag
Make an assortment of Chili. Original Chili (all beef), Chicken Chili, Vegetarian Chili
Fried Chicken, Potato Salad Beans
Fried Fish, Hush puppies, Cole Slaw, Fries
Smoked Turkey, Rolls assorted sliced cheeses, Assorted rolls, Salad..

Pizza bites: pepperoni, sausage, Canadian bacon and pineapple, or whatever other topping you like on a crescent roll. Then stick a piece of string cheese (or shredded mozzarella). Roll and bake as directed on crescent package. Have marinara sauce for dipping.
Oven fries are always popular, especially if served with melted cheese, bacon, and green onions on top. (Cut potatoes into fries, bring to boil for a couple minutes, rinse and toss with a couple tablespoons of olive oil, salt, pepper, whatever. Bake at 400 for 15, flip and bake another 15 until desired brown-ness is achieved. Toss the cheese and other toppings on about 5 minutes before you think it is ready.)

Homemade meatballs simmered in spaghetti sauce, brushetta, stuffed mushrooms are all great with Italian. Also a kale or broccoli salad might be a nice contrast. My final suggestion is something I just made for Christmas and the family loved it. I got it off the internet and it was awesome:
Take 2 filet mignons and slice each into strips. Pound each strip with a meat hammer until they are thin. Marinate in italian dressing overnight. I know it seems like sacrilege to pour italian dressing over filet but do it. ;) Drain the dressing off the next day before you cook. Lay out each strip and put some whipped cream cheese and long sliver of a seeded jalapeño on each strip. Cook 1 lb of bacon about 1/2 way. I laid mine out on a plate and microwaved it about 6 minutes. Cut the bacon in half and wrap one around each filet strip; secure each with a toothpick. Grill them or broil them until the beef is done. Heavenly!
For dessert you could do tiramisu. Good luck!
Velveeta chili cheese dip:
1 small box of Velveeta (we always get the big box and use half, it's cheaper by the oz, or whatever they calculate by)
1 can of your favorite chilli
1 can of your favorite salsa
Cut Velveeta into 1/2 inch or so cubes and place in med-large microwaveable safe bowl, dump in chilli and salsa, mix, microwave for 5 minutes, mix, repeat until cheese is melted.
Tostitos scoops work well with this dip. MMMMM...now I want some.

I know you said no Mexican. This is so cheesy, you really don't taste the salsa, and only occasionally get a bean or two. I don't think of this a Mexican at all.
Little party pizza's - Sometimes you can get those little Totinos for $1 each...then cut them up in small bite size pieces. Or buy the ones you pop in the oven that are already bite sized.
A meat tray and rolls goes a long way...you can make the meat tray yourself for a lot cheaper.
Caesar salad, garlic bread to go with the pasta & maybe some oven
roasted veggies (red peppers, yellow zucchini, red onins etc).
For appetizers:
-mini quiches
-mini weiners in bbq sauce in a crock pot
-mini weiners wrapped in pastry dough & baked
-antipasta platter (salami, sliced cheeses, peppercini, olives)
-be sure to have some kid-friendly food too such as: chicken nuggets,
pizza, hot dogs, mini burgers, Goldfish crackers, Cheese Its, chips, juice

my fav party food ever-
take sopressata (thin sliced), pit a teaspoon of ricotta and julliened basil inside, fold into a pouch/ envelope, skewer and grill/ bake/ toaster oven until crispy. heaven on earth.
olive onion bread, you can probably make these with crescent rolls , like a jelly roll, but savory instead.
chicken satay with peanut dipping sauce.

I personally think that every good superbowl party includes some sort of cream cheese dip and tortilla chips, so my vote would be for a warm cream cheese/spinach/artichoke dip. I do have a great recipe my friend always makes, if you would like.
I like your chicken parm bite idea. I also would like to suggest a relish tray or fruit tray, since, you know, around this time of year so many people are really trying to stick with healthier diets. A salad would be harder to serve, but I would be thrilled to have some healthy snack options at a party.
An app I like and goes well with kids to is mini pepperoni k-bobs. I do a cheese square, pepperoni, green olive and a cherry tomato all on a toothpick and then drizzle sun dried tomato Italian dressing over it! it's very tasty!
Is Italian OK? There are great pizza recipes all over the Internet! And don't forget to have some chocolate among the desserts.
This is something VERY old that I remember from when I was really little. When my parents would have parties, my mom always found these mini-loaves of dark rye bread. She'd get ham from the deli shaved almost paper thin and make a spread of cream cheese and chives. She'd put all that together as little 2-bite sandwiches and they were always a hit....even with me as young as 4!!!!!
We don't eat pork so a favorite in our house is Pulled Chicken in the crockpot. It's soooo easy to make - google the recipe "crock pot pulled chicken". There are many out there - the one that I use is made with Sweet Baby Rays BBQ sauce (and a few other ingredients). You can get coleslaw to go with it and mini individual corn breads - beans - corn yum!
We're doing bacon wrapped smokies and lumpia as part of ours.
