Hi ladies, I hope you're having a nice Thursday...

So I am making cheese tortellini for dinner (not really making, I have it frozen). Do you serve it with red sauce, white sauce or pesto?

And I have frozen spinach I want to serve on the side. I usually like spinach n feta but I'm out of feta and not going food shopping, so anyone have any other delish spinach sides?

And finally, I have chicken sausage I am planning on serving tomorrow - anyone have great recipes for this?

So What Happened?

Thanks alot!! I made the red sauce. I ended up serving the chicken sausage with the cheese tortellini so it was a bit more protein which was good. I cooked the spinach on the side with garlic and olive oil and some parmesan cheese. I put it in the kids sauce as a "one dish" but the little buggers didn't eat much of it. Oh well they loved the rest. Thanks again!

Red sauce. Have you considered throwing the frozen spinach right into the sauce? I do that all the time for a one dish meal, maybe with a crusty bread on the side. Spinach goes well with mushrooms and/or lemon too. You can also thaw the spinach and put it in a crock with some butter or lemon, and heat through in the oven, adding a little Parmesan cheese for the last few minutes - go light since you have cheese in the tortellini.

For the chicken sausage, just serve it with the leftover tortellini.

Have you tried recipes.com or one of those websites?

Cheese tortellini is a really "heavy" pasta, so I usually stick with a red sauce or some pesto and serve with a side salad.

Frozen spinach is great with some crispy bacon and garlic! I usually fry the bacon and then crumble it up. Then saute the garlic in the bacon grease. Add the spinach and heat it through. Season it with salt and pepper and serve!

I like to make chicken sausage with zucchini and mushrooms in just a plain sauce with spices added.
No real recipe though, I just use a pam spray and first brown the sausage (I cut it into pieces), when that's done, I add the zucchini, mushrooms and some garlic. When cooked through, I add plain canned tomato sauce and a little bit of water and things like rosemary, oregano, thyme, etc and bring it to a boil. You could put it over pasta or rice, but I just eat it as is.

I would definitely go with red sauce for the tortellini. For spinach, I usually just put a bunch of butter (actually it's country crock) and then sprinkle some Lawry's seasoning salt and garlic powder on it.

I have had tortellini in each of those sauces (though the alfredo was a little much), also in pink sauce and in an italian tomato soup (great for cool nights) and a pasta salad. It is very versatile. I liked the pink sauce the best, but probably not the healthiest choice.

I like my spinach just plain with butter and lemon juice, my mother would add cream of mushroom soup and make creamed spinach.

I do a red sauce w/ tortellini...no pesto for us...tree nut allergy

never tried chicken sausge...let me know what you think

well, the last time we had ravioli....I sauteed garlic & onion in olive oil. Then I added some canned spinach, S & P, & some red pepper flakes. I poured the spinach sauce over the cooked ravioli....& it was delicious!

my family prefers sauces such as this....as opposed to canned/jar sauces. For red, I do the same, except I add chopped fresh or canned Italian tomatoes (minus the spinach). I guess you could say we prefer glazed pasta over sauced!

EDIT: well, heck...I forgot the cheese! I added shredded Italian (4 mix) cheese + some more parmesan to the spinach. Sorry!

depends upon what else you are serving with it...

I have used red sauce for beef...alfredo sauce with chicken or shrimp.
Pesto for veggies.

I just steam our spinach....my boys love that. You can add it to the tortellini...it would be a GREAT combo!!

If you have Parmesan cheese - that would be nice shredded over it...

Chicken Sausage? Nope. haven't used that....but with sausage in general? I have done penne pasta, sliced bell peppers, black olives, pesto sauce...maybe add some pepperoni in it? Italian style two nights in a row?
