Anyone out there know of a "delish", quick appetizer recipe using pre-cooked
large shrimp?? Thanks for any ideas!!!

Hi S.,
You can take bamboo skewers, (soak them in water first so they don't splinter)thread the shrimp on the skewers, and baste with (teriyaki sauce, sesame seed oil, lemon juice & sriracha chili sauce) almost any marinade you prepare..You can always marinate the shrimp on the skewers in a zip lock bag for 30 minutes and then grill or broil for a few minutes. The shrimp has a nice little kick and even kids like it because they're eating on a stick! Hope you'll try it.

Very easy and Super Delicious!
Buy "sweet chili" sauce (comes in a tall bottle) in the asian section of your grocery store. Let the shrimp soke for at least 1/2 hour and serve. It always goes over well!

I never cared for this but my husband's family eats it up at every family get together. My mother-in-law takes a block of cream cheese, pours pre-made cocktail sauce over it with the shrimp and then serves it with crackers. My in-laws seriously inhale it as soon as it's put out on the table.

I would just grill the shrimp up and put them out with some Pad Thai Peanut sauce...everyone loves this sauce and you can either use a bottle kind or make your own (I don't have a rec. with me- but you can always look at foodnetwork.com)

Hi S.,

It would help if you have a baby-fry or a deep fryer, but can be done in cast iron.

Get some wonton wrappers, lightly season your shrimp (no tails). Place shrimp in wrapper (seal with water or light egg wash. Deep fry in peanut oil (you can use veg oil), but I like peanut oil better, until golden brown (won't take long...make sure oil is nice and hot...heat it up slowly. Drain on towels...serve with sweet and sour sauce,soy garlic sauce, regular shrimp cocktail suace and chinese hot mustard (one or all sauces will do -- what ever your taste) This is a nice crispy treat.

A great homemade cocktail sauce is 1 bottle chili sauce (like ketchup, only better texture and more character in the taste), 1-2 tbsp (or more to taste) of ground or creamed horseradish, a dash or two of tabasco, 1 tsp Worcestershire sauce. It is so much better that off-the-shelf sauce and even kids love it if it's not too spicy. Serve with lemon wedges so people who like a bit more tartness can self-squeeze.

You can also make a lovely bruschetta (thin toasted wedges of baguette topped with an olive tapenade or tomato-based bruschetta sauce) and put one shrimp on top. Bruschetta are great because they hold up to the moisture better than more delicate breads or crackers. I'd probably go with an olive tapenade or even a bit of pest in order to keep the moisture content down. Nothing more embarrassing than having a beautiful plate of hors d'oeuvres that no one can eat because the base disintegrates on contact!

Ingredients
1/2 cup fresh lemon juice
1 lb unpeeled shrimp
1/2 medium white onion
1/3 cup chopped fresh cilantro
1/2 cup ketchup
1-2 tablespoon bottled hot sauce
2 tablespoons extra-virgin olive oil
1 cup diced cucumber
1/2 cup diced tomato
1 small avocado
salt and pepper
1 large garlic clove

Directions

Dice onion, avocado, cucumber, cilantro, garlic, and tomato. Add to shrimp bowl and toss with ketchup, hot sauce,lemon juice and olive oil. Cover and refrigerate if not served immediately.
Serve in martini glasses for a stylish presentation. enjoy.
Garnish with lime slices and cilantro sprigs.
