Quick Side Dishes Rather Healthy Plz

I need some ideas for some sides. I am cooking bf a nice supper for our anniversary. What I have is BBQ ribs (his request with eye roll), sweet potatoes (need recipie for those too!) and a side. I will also be making lettuce salads! Does anyone have quick easy healthy sides? Preferably something served cooled. We dont get off work until 4:30 so ribs will be crock pot ribs, and potatoes I am hoping to have premade to just pop in the oven.

I need your cooking brains ladies!!!!!!!!!!

We love to take a variety of cut up veggies and seal them up in Aluminum foil and put them on the grill. Peppers, onions, zucchini, tomatoes, sugar snap peas, fresh green beans, mushrooms, fennel, carrots...you get the idea. Throw some Thai or Italian basil in there and drizzle with olive oil. You can also do this in the oven along with the potatoes. Personally, we really like "steak-cut" sweet potatoes, tossed with olive oil and baked, add salt or sugar after they come out of the oven.

Corn... DON'T husk it... Just put it, in husk, on the grill around the edges. Turn occasionally. Peek inside after 15-20 min. If shiny/bursting or slightly caramelized, pull. (If not, wait unyil it is). THEN husk. Silk ends up attached to husk (3 seconds to husk each ear... Rip, rip, done), and LOVELY perfect corn flavor.

Portabello Mushrooms. Drizzle olive oil over gills. Salt and pepper gills. Grill until mushrooms are moist and tender all the way through. Don't flip.

Fresh Ranier Cherries

Fresh peas w/ kosher salt sprinkled over

Simple bruschetta w Harissa

Capresé salad (fresh mozzarella, tomatoes, basil, olive oil)

Box of black bean soup, heat and sprinkle w goat cheese, & green onions

Watermelon Gaspacho

Watermelon slices

Frozen grapes

Bread from Outback (I'm not the only one who goes and orders 12-24 loaves from them and freezes, am I?)

Grilled peppers

Grilled fennel bulb

Whenever I serve ribs I serve coleslaw alongside. You can either buy the premix bagged stuff or thinly slice cabbage and grate carrots. You can make your own cole slaw dressing with mayo, sugar, vinegar, and lemon juice. I usually find it on allrecipes.com after googling quick cole slaw recipe (the sauce should be made in advance to let the flavors mingle). For sweet potatoes I usually roast them with a little brown sugar, orange juice, and fresh ginger. Otherwise here is a recipe for a sweet potato casserole, can't guarantee it's all that healthy, but, hey it's a special occasion right? I made it for thanksgiving and it was a hit.

I love to make my sweat potatoes cubed and boiled and then sautéed in garlic, butter and brown sugar.
what about a quinoa salad served cold.

hummous and pita :)
mozzarela cheeze and tomatoes with olive oil
olives and pickles....
chopped tomato and cucumber and onion sald with olive oil.
