No Cook Camp Foods

My family camps pretty regularly. I can think of lots of meals to make over a fire or with a camp stove. This weekend we will be camping with my extended family on my grandmother's ranch. My uncle makes bbq feast for dinner one night of the two we will be there. And a terrific breakfast is served one of the three mornings we will be there. Other than that we are on our own for food. Since so many people come to this thing, my grandmother, understandably, doesn't want everyone bringing firewood and camp stoves. So I need ideas for meals that do not need to be heated or warmed. Besides sandwiches, wraps and cereal bars, I am at a loss. (We went camping last weekend and lived off sandwiches and cereal bars for breakfast and lunch, so the family is a little tired of those). Most of the relatives will drive in to town and eat...too expensive and not really our style. Any great ideas?? I am stumped for some no cook meals. TIA!

How about fixings for taco salad at home and place in ice chest in individual bags - then when time to eat just combine in large bowl and enjoy. Also grille chicken at home and chop for a different twist to chicken salad - you could also mix this the morning you would want it for freshness and place fixings in the ice chest. Possibly take a big crock pot and make meatballs and sauce for meatball subs or a stew to cook all day if there is a place to plug into. Cold fried chicken could also be good made the day or night before you all leave. Have a great time.

Go to your local library and see if they have "The Scout's Outdoor Cookbook" compiled by Christine and Tim Conners or "Festive Picnics" by Pamela Sheldon Johns. Both cookbooks have sections of meals that can be prepared without any cooking. We have also made pizza rolls at home (take rolled out pizza dough put a very thin layer of pizza sauce, mozzarella and pepperoni (optional), roll up and bake. (Oh, we also made an "adult" roll that included a line of banana peppers.) Covered with a layer of aluminum foil and plastic wrap, they keep fine in a cooler for several days. To serve, cut into slices and serve with additional cold pizza sauce for dipping. Also, how about antitpasta salad?

I know you said you lived off sandwiches but what if you changed it up....I love chicken salad on croissants. Making the chicken salad ahead of time makes things easier. I also like deviled eggs, veggies with dip, hummus with pita, cheese/salami and crackers. There are days that we don't have a full meal we just snack all day....it doesn't have to be junk food. As for breakfast...granola and yogurt, regular cereal in plastic cups (my kids favorite), smoothies (you can make them yourself or buy them). I hope that helps. Have fun!

I like to make and buy a variety of dips -anything from salsa to spinach dip. As long as you can keep any dairy-based stuff good and cold, it's easy and so yummy! Take chips, tortilla chips, veggies in ziplocks and crackers for dipping. I take hummus, salsa, spinach dip and some family favorite homemade dips in Tupperware-type containers in the cooler. You can definitely make a meal off of many dips! We also often take a variety of cheeses and fruit. If you're so inclined bring a long a little summer sausage and it's a great meal!

When we camp, we are seriously starving at the end of the day. We go hard all day and I'm sure you will too. You need some substantial food! lol I don't feel comfortable keeping anything egg or mayonaise based in a cooler. Especially for 3 days! My Suggestion - check for a state park or even a roadside park with picnic grounds and bbq pit in the area to go make some burgers! Take one or 2 of the other familys you never get to see and want to spend a little more individual time with. Or it may be good just to go with your little family to decompress from being around all those other people. Time to reconnect with each other. And what's camping without a campfire, and smores!
You can take trail mix, salami and crackers, dried fruits(raisins, apricots), beef jerky, granola bars, dried creal, Pita bread, flatbread or tortillas (doesn't squish or dry out as fast as sliced loaf bread) foil pouches of tuna or chicken (Chicken-of-the-Sea, BumbleBee, etc.) These are great for camping meals -- tastier and not as messy as canned. The smoked salmon, teriyaki salmon and lemon-pepper marinated tuna are very good. Great in flatbread for sandwiches.

We like pasta salad of all kinds. You could make them before you leave and keep them in your coolers.

We like shrimp salad on finger rolls...
Egg salad on croissants...
PB and J on hot dog buns...
Make some gazpacho before you leave - there is nothing better than a yummy cold soup!!
How about a nice big salad - fruit or veggie.. those are always good.

Personally, I like cold chicken. Cook it at home and then keep it cool while you are camping (fried or baked). You could also take cold macaroni salad..things like that.
