Why don't you try www.cooksreceipe.com. they have several receipes that can be made with any kind of meat. Tuna is one of them. Good Luck!
My hubby is a challenge to cook for, and on top of that I'm not a very creative cook--he's a very steak and french fries kind of guy. No baked potatoes, No veggies, no roast, no stew, and don't even get me started on casseroles. One thing he actually will eat that I know how to prepare is a tuna fish sandwich. But I would like to spruce it up a bit...my tuna sammies are so bland. Anyone have some yummy and simple tuna fish sandwich recipes to share?

I put tuna, broiled eggs(chopped in small pieces, white onions (not alot and I chop it really tiny), some celery pieces, mayo, relish, and here's the kicker---a tablespoon of cheddar cheese and unsalted crackers (0h about 2 crackers or depending on how much you are going to make). Yes, I know cheese--but really you don't taste it at all and it makes the tuna smoother and the crackers give it a light creamy taste. And to top it off, I serve it on a hot dog bun to make it fun and eat it with carrot/celery sticks. Hope you have fun making it, I always do since I am the only who eats it...lol, my husband has expensive taste in food!
i use boiled eggs (i like 2 eggs per can)
red onion diced
sweet relish or sweet pickles diced
celery diced small
pepper & salt & mayo
then i like sliced tomatos on the sammie
sometimes i also use sliced red grapes or even strawberries (if i use strawberries i leave out the pickles)
& if i use fruit i like to use chopped walnuts (kind of like you would in a chicken salad but with tuna instead)
i make tuna salad and I use, tuna, boiled eggs, boiled macaroni, sweet pickles, onion and mayo. it is soooo yummy =)
I love tuna salad, however, I like mine very simple.
I but the tuna in water, drain it, mix in a little lemon juice, chopped dill pickle and enough mayo to hold it together. That might be too bland for you.
I do know of chopped apples, onion, celery being added.
I use mayo, tuna, boiled egg, baby dill pickles, green onions, salt, & pepper. I chop everything very fine, so I don't hear any, "What's that?" We love this tuna!!
We like to use the albacore (white tuna) packed in water, dill relish, chopped up (or grated) boiled eggs, dill relish and light mayo.
Another recipe is using the same tuna, eggs and mayo, but using sweet pickle relish and diced apple (not sure how much you would want to use of that).
You could also try multi-grain bread sometimes, and enriched white bread other times. Also, you could switch out the tuna for canned chicken and possibly add grated carrots or celery and/or onion.
I like my tuna with mayo, finely diced green apples, currants (not raisins), sliced almonds, S&P to taste.
This may be a little girly for his taste though.
Does he like egg salad? boiled Egg, mayo, yellow mustard, & curry powder to taste.
Miracle Whip, diced carrots & red onions. :)
My family LOVES my tuna recipe. I always use solid white tuna. We do not like brown tunafish. Anyway, I add diced celery, scallions, chopped fresh basil (dried works too), sometimes I add chopped pickles too, salt and pepper, and mayo (not miracle whip).
Hi D., I know you posted a while ago, but I figured I'd throw my ideas into the mix:
This one is my mom's recipe, basic tuna with the added crunch of Fritos.
Mom's Tuna
2 cans white tuna
1 large kosher dill spear, diced
1 cup or more to taste Fritos original size - crushed small
1/2 cup mayonaise - Hellman's Real Mayonaise - no substitutions
1/4 tsp Dried dill weed
1/4 tsp celery seed
pepper to taste
Drain tuna well in a strainer, flake with fork. Transfer to bowl. Add remaining ingredients and mix well.
This is from a bonafide cookbook. It's a little more work, but worth it. I make my mom's in a pinch, but this version when I have all the ingredients on hand.
Classic Tuna Salad - The Best Recipe American Classics by editors of Cooks Illustrated
2 6oz cans solid white tuna in water
2 tbs juice from one lemon
1/2 tsp salt
1/4 tsp ground black pepper
1 small celery stalk, minced about 1/4 cup
2 tbs minced red onion
2 tbs minced dill or sweet pickles
1/2 small clove garlic, minced or pressed through garlic press
2 tbs minced fresh parsley leaves
1/2 cup mayonnaise - Hellmans
1/2 tsp Dijon mustard
Drain tuna in a colander & shred with fingers until no clumps remain & texture is fine & even. Transfer to a medium bowl & mix lemon juice, salt, pepper, celery, onion, pickles, garlic, and parsley until evenly blended. Fold in mayonnaise & mustard until tuna is evenly moistened.

My 6 year old is a picky eater, too, but loves the tuna salad I make for her.
Tuna fish, drained
Chopped or sliced hard cooked egg
Sweet pickle relish
Diced red onion
Celery salt to taste
Mayonnaise to bind together
Sometimes I'll also add chopped pecans
1 can drained tuna.
1 tablespoon sweet relish.
1 egg ***
Enough mayo/miracle whip to coat everything.
Use a fork to mix so you can "mash" the egg up some more while mixing.
Spread on bread or eat with potato chips as a dip.
***Crack egg into microwave-safe mug, cover with a saucer, microwave 30 sec, use a knife to "chop" it in the mug, microwave 30 sec more. Be sure to wipe out ALL of egg from mug or will "rubberize" in it.
I DON'T cook, but I LOVE tuna salad.
